Instant Pot eggs and grits will become a brunch staple in your house. Cheesy corn grits cooked in mason jars are topped with a creamy, poached egg.

  • 1 cup chicken broth
  • 1 cup whole milk
  • 1 ¼ cups corn grits
  • 1 tablespoon butter (melted)
  • 1 ¼ cups shredded smoked cheddar
  • 7 ½ pint Mason jars
  • 7 large eggs
  • Salt and pepper to taste
  • Chopped green onions or fresh chives (optional)

How to cook:
  1. Combine the broth, milk, corn grits and melted butter in a medium mixing bowl. Cover and allow the grits to soak for at least two hours, up to eight hours.
  2. Stir in the shredded cheddar cheese, salt and pepper to the grits. Spoon the soaked grits into the Mason jars. Do not fill the jars more than 2/3 full.
  3. Add one cup of water to the bottom of the Instant Pot. Set a trivet inside. Arrange the filled jars on the trivet.
  4. Seal the lid on the Instant Pot. Select the MANUAL setting and set the time for 20 minutes. Afterwards, let the pressure release naturally for five minutes, then manually release the rest of the pressure.
  5. Check the water level in the bottom of the Instant Pot and add more water as needed to maintain at least one cup.
  6. Carefully crack one egg into each jar. Replace the lid of the Instant Pot and seal. Select MANUAL again and set the time to 0 for egg whites that are just set and a runny yolk. For more well-done eggs, add an additional minute to the cooking time. More than three minutes will result in hard-boiled eggs.
  7. As soon as the time is up, immediately release the pressure manually.
  8. Garnish with salt, pepper and diced green onions or chives. Serve immediately.

How to cook:
  1. Lightly oil the inside of a medium microwave safe bowl. Crack the egg(s) into the bowl and season with salt & pepper to taste.
  2. Pierce the egg yolks(s) with the tip of a pointy knife to prevent the them from potentially popping when microwaving. Cover with a microwave safe lid or plate.
  3. For 1 Egg in a Bowl: Microwave on High for 30 seconds. Let stand for 1 minute covered before removing plate to check doneness. If needed, cover again and continue microwaving in 15-20 second intervals until cooked to your preference.

  • 3/4 cup yellow corn grits (I use Arrowhead Mills)
  • 1 1/2 cups water
  • 3 cups milk (2% or whole), divided
  • 2 tablespoons unsalted butter
  • 1 cup grated sharp Cheddar cheese
  • Kosher salt
  • 6 strips thick-cut bacon, chopped
  • 1/4 cup chopped green onions
  • 4 large eggs
  • 2 tablespoons chopped chives
How to cook:
  1. For the grits
  2. Stir together the grits, water, and 2 cups milk in a large, microwave-safe bowl. Cover bowl with wax paper and cook in microwave on High until thickened, about 15 minutes, whisking every 5 minutes to combine.
  3. Stir in butter and cheese. If grits are too thick, heat remaining 1 cup milk and stir into grits 1/4 cup at a time until the grits are the desired consistency. Season to taste with salt.
  4. For serving
  5. While the grits are cooking, fry chopped bacon over medium high heat in a heavy skillet until bacon is lightly browned and crispy. Transfer bacon to paper towels to drain. Set aside.
  6. Pour off all but 1 teaspoon of the fat from the pan. Add onions and cook over medium heat until onions begin to soften, stirring occasionally, 2-3 minutes.
  7. When grits are done cooking, stir onions into grits.
  8. To serve, divide grits among four bowls. Fry the eggs to your liking. Top the grits with bacon, eggs, and chopped chives.
