Mince meat and potato cutlets are a popular Anglo Indian dish and this is a version concocted by family. This tasty bake is a bit like a Cumberland pie, but with sliced potato instead of mash.

How to cook:
  1. In a large frying pan heat the oil and gently fry the onion and carrots until softened. Add the beef and cook until browned, then reduce the heat and add the tomato ketchup, Worcestershire sauce, Marmite, flour and seasoning - mix through for one minute.
  2. Add the potato and pour over 150ml water and bring to the boil. Reduce the heat, cover and simmer for 15 minutes or until the potato is tender. Allow to cool completely.
  3. Meanwhile, roll out the short crust pastry to 4mm thick and line a pie dish, leave the excess pastry hanging over the edge and place in the refrigerator for 30 minutes..
  4. Preheat the oven to 200°C/Fan 180°C/Gas 6. Add the cooled filling ingredients to the lined pie dish, then roll out the puff pastry for the lid. Dampen the edge with of the pastry with egg then place the pastry lid on top of the pie and press the edges well to seal. Use a fork to pierce the top and decorate with trimmings, brush with with egg. Bake for 30 minutes until golden brown.
  5. Serve the pie with buttery mash and seasonal vegetables or it tastes just as good by itself with a good dollop of your favourite sauce, enjoy!

  • 200g Minced meat
  • Some ginger
  • Some Chives
  • Some Soy sauce
  • Some Corn flour

How to cook:
  1. After the potatoes are boiled in water, chop them with a knife.
  2. Put ginger foam, starch, a small amount of cooking wine, and a small amount of salt in the meat foam.
  3. Chop the shallots and set aside.
  4. Prepare the sauce, light soy sauce, starch, a small amount of five-spice powder, chicken essence and water, mix well and set aside.

  • 1kg white potatoes, cut into even discs roughly 1cm thick
  • 50g butter
  • 2 leeks, trimmed, sliced and washed
  • 500g lean beef mince
  • 1 beef stock cube, made up to 250ml

How to cook:
  1. Pre-heat the oven to 200° C.
  2. Melt most of the butter in a large saucepan or casserole dish over a medium heat. Sweat the sliced leeks for 6-7 minutes until softened, then add the beef and increase the heat, browning it well all over. Add the stock, bring the mixture to the boil, then reduce to a simmer for 15 minutes.
  3. Adjust the seasoning to taste then remove from the heat. Spoon into a 12 inch x 6 inch ceramic baking dish. Layer the potatoes on top, seasoning well in between the layers.
  4. Dot the top of the potatoes with the remaining butter, then cover the dish with aluminium foil and bake for 40-45 minutes until the potatoes are soft. Remove from the oven once they are soft and discard the foil.
  5. Sprinkle the grated cheeses and dried oregano on top. Return the dish uncovered to the oven for 15 minutes until the cheese is golden and melted. Remove from the oven and leave to stand for a few minutes before serving.

  • 2 1/4 pounds (1 kilogram) lean ground lamb, or ground beef, or a combination of pork and veal
  • 3 tablespoons vegetable oil, canola oil, sunflower oil, or ghee
  • 1 large onion, chopped very fine

  • 1 tablespoon garlic paste

How to cook:
  1. Efficient cooks always multi-task so, while we are cooking the minced meat (as below) we will simultaneously set up the potatoes to boil.
  2. Wash thoroughly and then put the potatoes into a deep pot and cover with enough water so it is at least an inch over the potatoes. Add a teaspoon of salt to the water. Set up on medium heat and boil until you can easily pierce the potatoes with a fork.
  3. Remove and cool. Once cool, remove the potato skins and then mash thoroughly in a deep mixing bowl.
  4. To cook the minced meat: In a large bowl combine the mince meat with half a cup of water or milk and remove any lumpiness by mixing well with your fingers.
  5. Add the vegetable/ canola/ sunflower cooking oil or ghee to a large pan and set up to heat on medium to high heat.
  6. Now add the chopped onions and fry till translucent.
  7. Add ginger and garlic pastes, the chopped green chilies. Give the whole mixture a brisk stir and then immediately reduce the heat to low.
  8. Next, add the chilly powder, the turmeric powder, the garam masala powder, and the cumin powder and stir for a few minutes. Keep the heat at medium to low.
  9. Add a few tablespoons of water to keep the mixture from burning or sticking to the pan.
  10. Keep stirring till the oil starts to separate from your masala mixture. Now, add the minced meat and follow with salt as per taste. Stir to mix well and keep flame at medium to low.
  11. Cover the pan for about two minutes and cook, then uncover and cook, stirring until all the water dries off. Remove from heat and keep aside.
  12. To assemble the cutlets: Once the cooked minced meat has cooled, add to it the bread crumbs and mix well with your fingers.
  13. Next, add the mashed potatoes and mix well again.
  14. Once done, divide up the mixture to form cutlets/ patties of approx 3 inch diameter by 1 inch thickness.
  15. Now heat the vegetable/ canola/ sunflower cooking oil or ghee in a shallow pan until very hot and fry cutlets in batches of 2 to 3.
  16. Fry the cutlets for about 2 minutes on each side on medium flame to obtain a light brown crust.
  17. Remove cutlets to a plate covered with a kitchen towel to absorb any excess oil.
  18. For a true blue Anglo Indian meal, serve these lamb or beef mince and potato cutlets together with rasam and boiled rice. Alternately, you could serve them with freshly made parathas and sliced onions and tomatoes.
