Ingredients:
  • 6 bhajji mirchi ((green chilies,plump, long, less spicy))
  • ¾ cup besan (or gram flour or sengapindi)
  • 1 to 1 ½ tbsp corn flour (or semolina or rice flour (optional))
  • Salt to taste
  • ½ tsp ajwain (or carom seeds or vaamu)
  • ¼ tsp ginger garlic paste ((optional))
  • ¼ tsp red chili powder ((optional))
  • ¼ tsp turmeric (or haldi)
  • 1 Pinch cooking soda ((if you skip this they will not puff))
  • Oil for deep frying
  • 1 onion (finely chopped)
  • 2 tbsp coriander leaves (chopped)
  • Salt to taste
  • 1 Green chili (chopped)
  • 1 tbsp lemon juice
  • red chili powder (as needed (optional))

How to cook:
  1. Preparation
  2. Make sure you use less spicy chilies. Rinse the chilies.
  3. Wipe dry with a clean cloth or kitchen tissues.
  4. Slit them in the center length wise, deseed and set aside. If any seeds are left inside they may burst in oil.
  5. Heat oil in a pan for deep frying.
  6. Mix flour, salt, soda, turmeric, red chili powder, ginger garlic paste & ajwain thoroughly in a bowl.
  7. Pour water little by little to get the right consistency, not thin and not too thick. The batter should just coat the chili when it is dunked in the batter. Too thin batter will begin to drip off from the chilies .Too thick will not cling on to the chilies. Once you finish mixing, just whisk 4 to 5 times with a fork on a medium speed.
  8. Making mirchi bajji
  9. Check if the oil is hot enough by dropping a small portion of the batter to the hot oil. If it is ready, the batter will rise immediately without browning. Reduce the flame to medium.
  10. Dip the chilies completely in the batter and coat them well.
  11. Gently slide it in hot oil. Fry till they turn golden and crisp on a medium flame. Transfer them on to a kitchen tissue.
  12. Optional step for extra crispness - Once you finish frying all, revert them back to the hot oil. Fry them again for 1 to 2 mins, to keep them crispy for longer time.
  13. Stuffing
  14. Mix together onions, chilies, red chilli powder (optional) and coriander leaves. Sprinkle some lemon juice. Mix all of them.
  15. Take a small spoon or knife and open up the slit gently. Stuff all of them as desired with the onion & chilies.
  16. Serve mirchi bajji immediately with a cup of tea.

  • Long Chilli / Bajji milagai - 5 nos
  • Oil - to deep fry
  • Fried gram dal/Pottukadalai OR roasted peanuts - 1/2 cup
  • Red chilli powder - 1.5 tsp
  • Ajwain/Omam- 1/2 tsp
  • Cumin powder - 1/4 tsp
  • Hing - 1/8 tsp
  • Chat masala powder - 1/2 tsp
  • Tamarind - small gooseberry size
  • Salt & water - as needed
  • Besan flour - 1 cup
  • Rice flour - 1/3 cup
  • Cooking soda / Baking soda - 1/8 tsp
  • Red chilli powder - 1 tsp
  • Food color - a pinch ( optional)
  • Hing - 3 pinches
  • Omam/Ajwain - 1/2 tsp
  • Salt & water - as needed
How to cook:
  1. To make Andhra michi bajji, take all the ingredients given under “for stuffing” and grind them to a paste. Check for taste and add more chilli powder if you need.
  2. Wash and cut the chillies into two vertically. Remove the seeds partially or completely based on the spiciness you need. Keep it aside.
  3. Stuff the chilli as you like and arrange in a plate.
  4. In a wide bowl,take the flours, baking soda, salt and mix well to a paste adding little water. Now add more water and bring it to dosa batter consistency. Make sure there are no lumps in the bajji batter. The chilli should be well coated with the batter. So make the batter slightly thick. Too thick batter gives you hard bajji and too thin batter makes tails in the bajji. So consistency of batter is very important.
  5. Now take a stuffed chilli and dip in the batter. Heat oil to deep fry. To check the heat of oil, put a pinch of batter and if it rises immediately, batter is just right.simmer the flame and drop the chilli coated with bajji batter by holding its stem.
  6. Deep fry both the sides till golden brown and crispy. Enjoy eating hot with tea/coffee !
  7. Chop the onions & coriander leaves finely. Sprinkle some salt and add few drops of lemon juice. Mix well. Sprinkle them on top & serve the bajji.
  8. You don’t need any chutney or side dish for this. But kids may like it with tomato sauce. So serve accordingly !

  • 1 cup besan / chickpea flour / gram flour
  • ¼ cup rice flour / chawal ka atta
  • 1 tsp kashmiri red chili powder / lal mirch powder
  • ½ tsp turmeric powder / haldi

  • ¼ cup water (or as required to prepare batter)
  • pinch of baking soda / sodium bicarbonate
  • 2 potatoes (boiled and peeled)

How to cook:
  1. besan batter recipe:
  2. firstly, take besan, rice flour, chili powder, haldi, hing and salt. mix well.
  3. furthermore, add water and make a smooth batter.
  4. also add a pinch of baking soda and mix gently.
  5. stuffing recipe:
  6. firstly take mashed potatoes, green chili, ginger, coriander leaves and onion.
  7. also add haldi, red chili powder, jeera, aamchur, salt and hing.
  8. mix well.
  9. mirchi stuffing recipe:
  10. firstly, slit green chili at the centre and remove seeds.
  11. also stuff the potato stuffing into the chili.
  12. dip the stuffed chili into besan batter, coat and deep fry to golden brown.
  13. finally, serve stuffed potato mirchi bajji / mirapakaya bajji.

How to cook:
  1. mirapakaya bajji prepaparion:
  2. firstly, wipe the chilli clean and slit in centre.
  3. remove seeds to create some space to fill onion masala at the end.
  4. now in a large bowl take 2 cup besan, ¼ cup rice flour.
  5. add ¼ tsp turmeric, ½ tsp chilli powder, ¼ tsp ajwain and ½ tsp salt. mix well.
  6. now add ½ cup water and mix well.
  7. add water as required and prepare a smooth thick batter.
  8. further add ¼ tsp baking soda and mix well.
  9. now dip the chilli in besan batter and drop in hot oil.
  10. deep fry on medium flame stirring occainnally.
  11. fry until the bajji turns golden brown and crisp.
  12. drain off over the kitchen paper to remove excess oil from mirapakaya bajji.
  13. onion masala preparation:
  14. in a small bowl take 1 onion, 2 tbsp coriander, ½ tsp chilli powder, ½ tsp chaat masala, ½ tsp cumin powder, ¼ tsp salt and 1 tsp lemon juice.
  15. mix well making sure everyhting is well combined.
  16. now open the mirchi bajji and stuff the onion masala.
  17. finally, garnish with 2 tbsp sev and enjoy masala mirchi bajji with chai.
