  • 1 tablespoon olive oil
  • 3 slices bacon
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 pound fresh collard greens, cut into 2-inch pieces
  • 3 cups chicken broth
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 pinch red pepper flakes

How to cook:
  1. Heat oil in a large pot over medium-high heat. Add bacon, and cook until crisp, 5 to 7 minutes. Remove bacon from pan, crumble, and return to the pan.
  2. Add onion to the pan and cook until tender, about 5 minutes. Add garlic, and cook until just fragrant. Add collard greens, and fry until they start to wilt.
  3. Pour in chicken broth and season with salt, pepper, and red pepper flakes. Reduce heat to low, cover, and simmer until greens are tender, about 45 minutes.

  • 2 lbs collard greens, stems and leaves finely shredded
  • 3 bay leaves
  • 2 sprigs thyme

Ingredients:
  • 1/2 cup lard
  • 8 ounces yellow onion, diced
  • 2 teaspoons minced garlic
  • 2 pounds collard greens, washed well and stemmed, leaves cut into 1- to 2-inch squares
  • 10 ounces smoked pulled pork or cooked ham, cut into 1/2-inch pieces
  • 4 teaspoons kosher salt
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Rodney's BBQ sauce or your favorite vinegar-based barbecue sauce
How to cook:
  1. Heat the lard in a large heavy-bottomed pot over medium heat. Add the onions and garlic; saute until translucent, 5 to 7 minutes.
  2. Add the collard greens, pulled pork and 4 cups water. Cover and simmer until the greens are completely tender, about 45 minutes.
  3. Stir in the salt, cider vinegar and BBQ sauce.
