Ingredients:
- 1- 10 oz. box BUENO® Sopaipilla Mix
- 1 Tbsp. vegetable oil
- ¾ cup Warm water
- 6 cups cooked pinto beans drained
- 2 16oz. jars BUENO® Hatch Green Chile Sauce
- 2 tsp. salt
- 1 tsp. granulated garlic
- 4 cups shortening
- 2 large tomatoes diced
- 1 cup Monterey jack cheese shredded (about 3 oz.)
How to cook:
- Mix sopaipilla mix, oil and water together to make a smooth dough. Let stand for 20 minutes.
- Meanwhile, in a non-stick skillet, warm the beans and 1 ½ cups of Green Chile Sauce over medium heat for approximately 20 minutes or until excess moisture evaporates.
- Stir in salt and garlic. Continue cooking for 5 minutes, mashing beans.
- Roll out sopaipilla dough. Cut into 8 squares.
- Heat shortening over medium heat. Place a square of dough one at a time in hot oil. Fry until golden brown on each side.
- Split two seams of each sopaipilla with a paring knife. Stuff with bean mixture. Garnish with remainder of heated green chile sauce, tomato and cheese.

Ingredients:
- 2 cups Flour (sifted)
- ½ tbsp. baking powder
- ½ tsp. salt
- ½ tbsp. sugar
- 1 tbsp. vegetable oil
- 1 cup warm water
- Vegetable oil for frying
How to cook:
- In the bowl of a stand mixer (or a regular mixing bowl if making by hand) whisk the flour, baking powder, salt and sugar together.
- Create a small depression in the center and pour in the 2 tablespoons of vegetable oil.
- Whisk in the oil.
- Gently pour in the warm water and knead the dough until it is smooth.
- It only takes one to two minutes using the dough hook in a stand mixer.
- If kneading by hand, gently knead in the bowl until the dough sticks together.
- Place on a lightly floured surface and continue until the dough is smooth.
- Divide the dough in half, and seal each half in a zipper lock bag to rest the dough while you heat the oil for frying.
- Heat frying oil in a stove top dutch oven, or in a heavy-duty frying pan, to around 340 to 350 degrees.
- The oil should be at least 2 inches deep.
- Remove one portion of dough and roll out on a clean, flourless surface.
- Roll the dough to a thickness of ⅛ inch.
- Using a pizza cutter, cut the dough into squares approximately 4 X 4 for a nice restaurant look.
- Place a sheet of plastic wrap over the rolled out dough.
- It's very important the dough stay moist and not dry out.
- Gently place an individual square of dough into the hot oil.
- It should begin to puff up within about 5 seconds.
- Carefully splash oil over the top, this really seems to help the sopaipilla puff.
- Once it's finished puffing up, fry until it reaches a light golden brown on both sides.
- Place in a large bowl lined with paper towels.
- Repeat with the remaining dough.
- Serve immediately with honey.

Ingredients:
- 4 cups (520 grams) all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon table salt
- 2 teaspoons sugar ((optional: leave out if making savory sopapillas))
- 2 tablespoons shortening
- 1 1/2 cups warm milk (90-110F degrees)
- 2 quarts oil for frying

- In a medium bowl, whisk together the flour, baking powder, and salt.
- Using a pastry cutter or a fork, cut in the shortening until it is in fine crumbs (the largest piece should be smaller than the size of a pea.)
- Make a well in the center of dry ingredients and pour in the warm milk all at once.
- Stir with a large spatula until the dough comes together to form a ball.
- Turn the dough onto a floured surface and knead for 2 minutes.
- Place back in the bowl, cover and refrigerate for 20 minutes.
- While the dough is resting, heat the oil to 375 degrees F.
- Roll the dough to 1/8" thickness and cut into 3-inch squares with a pizza cutter or knife.
- Working in batches, cooking 3 sopapillas at a time, place the dough carefully into the hot oil and fry for about a minute, until golden brown on the bottom. Then flip over and cook an additional 30-60 seconds. (Note: If the dough does not puff up after 10 seconds or so, spoon a little hot oil over the surface of the sopapillas.)
- Remove the cooked sopapillas to a paper towel-lined plate and continue cooking the remaining batches.
- Serve with honey while warm. Or fill with meat for an entree.
