Ingredients:
- 1/4 cup Maple Syrup
- 1/4 cup Organic Virgin Coconut Oil
- 8 prunes
- 1/4 cup cacao powde
- 2 cup Almonds or Walnuts or mixed nuts (Ground and must be raw.)
- 1 cup raw Cashews (Soaked ( a minimum of 6 hours but overnights best with a teaspoon of maple syrup ))
- 1/2 cup prunes
- 500 g frozen Berries
- 1 cup Cherries (Roughly chopped)
- 2 cups Coconut ( shredded)
- 1/2 cup Maple Syrup
- 1/4 cup Beetroot Juice
- 1/2 cup cacao powder
- 2/3 cup Organic virgin Coconut Oil
- 1/4 cup Maple Syrup
How to cook:
- Blend the nuts until they are chopped finely. Should take about 20 secs.
- Add cacao, prunes , melted coconut oil and maple syrup and work into a doughy texture - if its sludgy or wet grind some more nuts and add until its quite doughy.
- Press into a greased tin ( use coconut oil) and make sure its really flat and well pressed- If you need more to cover the tin base then make more (depends on the size your making it).
- Freeze for a minimum of four hours then move on.
- Blend everything except for coconut and cherries. Puree until smooth and creamy.
- Them remove place in a bowl and add the chopped cherries and shredded coconut.
- Mix by hand- remove the base from the freezer and pour the mixture over the base try to keep it about 2.5 inches thick at the most- Set aside and any extra in a separate bowl for later. Freeze for two hours.
- Melt coconut Oil gently, add honey and cocoa, (or cacao powder) and mix until a glossy ganash forms- if you like really fudgy choco you can add more cacao. Taste at this point and if it is not sweet enough, add a little extra stevia as maple syrup may make it to runny.
- Remove the slice from the freezer, make sure the top is a bit firmer. Spread the choco topping over the top and place back in the freezer.
- Freeze over night or minimum 5 to 6 hours. Remove and cut up then place in an airtight container to keep it fresh.

- 1 cup unsalted macadamias
- 1/3 cup cacao or cocoa powder
- 2 1/2 tbsp coconut oil (melted)
- 3/4 cup fresh medjool dates
- 1 1/2 cups shredded coconut
- 1 cup cherries (fresh or frozen)
How to cook:
- Line a 20cm x 20cm tin with baking paper.
- In a food processor, blitz macadamias, cacao/cocoa powder, coconut oil and half of the medjool dates until smooth. Press into prepared tin.
- In the food processor blend remaining dates, shredded coconut and cherries until smooth and spread over the top of the macadamia base.
- Cover and freeze for an hour or until firm.
- Remove from the tin and slice into 12 squares.
Homemade Cherry Ripe Bites with No Added Sugar

While homemade dry-roasted strawberry dust is used in this recipe, you can just as well substitute it store-bought powder or with equal amount of dried goji berries. You will need latex gloves to pit the cherries and a silicone ice cube tray to make these cherry ripe bites. Otherwise shape into a block and cut into bars or bites.

Ingredients:
- 250 g fresh cherries
- 2 tbsp dry-roasted strawberry powder* OR 2tbsp goji berries
- 3/4 cup dessicated coconut
- 1 tbsp coconut oil (melted)
- 140 g dark chocolate (melted)
How to cook:
- To make the Dry-Roasted Strawberry Powder:
- Preheat oven to 110C (90C fan-forced, 225F, gas mark 1/4).
- Wash strawberries are remove stems.
- Slice strawberries into 4mm thick slices and spread on a paper-lined baking tray.
- Roast for 2-3 hours, until strawberries have dried out.
- When dry, grind to a powder in a coffee grinder or blender.
- To roast the Cherries:
- Preheat oven to 160C (140C fan-forced, 325F, gas mark 3).
- Cut cherries in half and remove pit.
- Spread cherries, cut side up, on a paper-lined baking tray and roast for 20 minutes.
- To make the Homemade Cherry Ripe Bites:
- Place roasted cherries and strawberry powder in a 2 cup capacity jug. Blend using your stick blender until smooth.
- Add dessicated coconut and melted coconut oil. Mix to combine.
- Fill a silicone ice cube tray with the cherry berry mixture and place in the fridge for 1 hour to set.
- Once set, remove from the mould.
- Melt dark chocolate in a small bowl (in the microwave is fine, heating for 20 seconds at a time then mixing).
- Dip cherry ripe bites in melted dark chocolate. Set aside on baking paper for the chocolate to set.
- To store:
- Keep Cherry Ripe Bites in an airtight container in a cool, dry place or in the fridge for upto 1 week.
