Easy Blender Salsa
My family begs me to make this blender salsa during football season, with or without company coming over. It's so easy to make, that I don't mind. Use caution with the jalapeño pepper, however. I recommend using kitchen or disposable gloves. These amounts are the flavor my family likes, but you can use less or more jalapeño pepper depending on your tastes.

  • 2 (14.4 ounce) cans diced tomatoes
  • 1 jalapeno chile, seeds and ribs removed
  • ½ yellow onion, quartered
  • ½ bunch cilantro leaves
  • 1 tablespoon fresh lemon juice, or to taste
  • salt to taste

How to cook:
  1. Pour 1 can of tomatoes into a blender; add jalapeño pepper, onion, cilantro leaves, lemon juice, and salt. Blend until fairly smooth. Pour in second can of tomatoes and blend briefly. Adjust seasonings to taste by adding more lemon juice and salt. Let salsa rest for 1/2 hour before serving to allow flavors to blend.

  • 14 oz can Organic Diced Fire Roasted Tomatoes (or regular diced tomatoes)
  • 10 oz can Original Rotel
  • 10 oz can Mild Rotel
  • 1/2 small red onion (rough chopped)
  • 1 - 3 cloves garlic (peeled and smashed)
  • 1 jalapeno (washed & chopped (seeded for mild, leave seeds for spicy))
  • 1 teaspoon honey
  • 1 teaspoon cumin

  • 1 medium lime (juiced)

How to cook:
  1. Blend all ingredients
  2. Simply pour all of your ingredients into a blender and pulse a few times until chunkier ingredients are chopped small. Pour into jars and store in fridge!

  • 5-6 fresh tomatoes
  • 1/3 bunch fresh cilantro (about 1/3 cup loosely packed)
  • 1/4 cup red onion and/or sweet onion
  • 1 TBSP minced garlic
  • 1 TBSP lime juice
  • 1 tsp salt
  • 1 pinch granulated sugar

How to cook:
  1. Wash tomatoes and cut out the core. Slice each tomato in fourths. Using a spoon or your hands, gently remove the seeds from each tomato. Make sure you feel around each section and get all the watery seed membrane out. The tomato pieces will look empty and that's ok!
  2. Slice onion into 1" chunks. My favorite salsa has half red onion and half sweet onion. If you opt for both, you'll just need about 4-5 one inch chunks of each.
  3. Cut 1/3 of one bunch of cilantro. Take that bunch and cut it in half or thirds, depending on the size.
  4. Add tomatoes to your blender. Top with cilantro, onion, garlic, lime juice, sugar and salt. Place the lid on your blender and pulse 5-10 times. I like to aim for a consistency thinner than chunky salsa, but definitely not pureed.
  5. Transfer salsa to a jar. Refrigerate for at least 2-3 hours before serving. Salsa stays fresh refrigerated in an air tight container for 1 week.
