No-Bake Apricot Slice

No-Bake Apricot Slice

Ingredients:
  • 2 Cups Powdered Icing Sugar, 270 grams
  • 1 Tablespoon Butter, Melted, 15 mls
  • 1 teaspoon Vanilla Essence, 5 mls
  • 2-4 teaspoons Water
  • ¼ Cup Finely Desiccated Coconut, 22 grams (to decorate)
  • 125 grams Butter, diced
  • ½ Cup Soft Brown Sugar, Packed, 100 grams
  • ½ Tin Sweetened Condensed Milk (approx 180mls)
  • 1 Cup Dried Apricots, 190 grams, chopped
  • 1 x 250 gram Packet of Wine Biscuits, crushed (Wine biscuits are similar to a tea biscuit, Marie Or Arrowroot)
How to cook:
  1. Lightly grease a 25 x 25 cm slice tin, or prepare with baking paper, and set aside.
  2. Using a food processor (or with a rolling pin and a large ziplock bag), crush the biscuits to a fine or chunky crumb and set aside.
  3. Chop up the apricots and set aside.
  4. In a large sauce pan add the butter, brown sugar and condensed milk and heat gently until the butter has melted but do not boil, remove from the heat.
  5. Add the crushed biscuits and apricots to the saucepan and combine well with a large wooden spoon.
  6. Pour into the prepared tin, press mixture down firmly and smooth with the back of the spoon and then set aside and prepare the icing
  7. In a medium bowl add the icing sugar, melted butter and vanilla and stir to blend.
  8. Add water a teaspoon at a time, stirring well, until you have a thick but pour-able consistency.
  9. Spread this over the prepared slice, then sprinkle with the coconut.
  10. Place in the fridge to set, or overnight, then slice and store in the fridge until needed.

  • 250 grams Marie Biscuits (or a similar plain biscuit)
  • 50 grams butter (melted)
  • 1/2 cup desiccated coconut (45 grams)
  • 2 tbsp cocoa
  • 390 gram tin of sweetened condensed milk
  • 1 tbsp coconut oil
  • 360 grams white chocolate (two blocks)
  • 100s and 1000s
  • 145 gram pack of Christmas M&M's

How to cook:
  1. Line an 18 x 28cm slice tin with baking paper and set aside until needed.
  2. Finely crush the Marie Biscuits, you can do this using the pulse function of a food processor or place them into a bag and using a rolling pin to crush. Transfer to a large bowl.
  3. Add the cocoa and desiccated coconut and stir to combine.
  4. Add the melted butter and sweetened condensed milk and mix until combined.
  5. Transfer the chocolate slice mixture to your prepared slice tin.
  6. Break the white chocolate into pieces and place it along with the coconut oil into a microwave safe bowl and cook for 30 seconds spurts until it's just melted.
  7. Carefully pour the melted chocolate over your chocolate slice and then decorate with the M&M's and sprinkles.
  8. Place the slice into the fridge for a minimum of 3 hours to firm before cutting into pieces.
  9. Thermomix Instructions
  10. Line an 18 x 28cm slice tin with baking paper and set aside until needed.
  11. Place the butter into your Thermomix bowl and cook for 3 minutes, 60 degrees, speed 2 to melt.
  12. Add the Marie Biscuits and select the Turbo function. Blitz for 2 seconds 2 - 3 times or until the biscuits are crushed.
  13. Add the cocoa, coconut and sweetened condensed milk and mix for 12 seconds, speed 5, REVERSE. You will need to use your spatula to help push the mixture down into the blades. If needed, combine for a further 10 seconds, speed 5.
  14. Transfer the chocolate slice mixture to your prepared slice tin.
  15. Break the white chocolate into pieces and place it along with the coconut oil into a microwave safe bowl and cook for 30 seconds spurts until it's just melted.
  16. Carefully pour the melted chocolate over your chocolate slice and then decorate with the M&M's and sprinkles.
  17. Place the slice into the fridge for a minimum of 3 hours to firm before cutting into pieces.

  • 60 g unsalted butter (melted)
  • 200 g plain arrowroot biscuits or plain digestive biscuits
  • 2 cups desiccated coconut
  • 3 Tbsp unsweetened natural cocoa powder
  • 1/3 cup sweetened condensed milk
  • 1/4 cup milk
  • 3/4 cup icing/confectioners sugar
  • 2 Tbsp unsweetened natural cocoa powder
  • 2 Tbsp unsalted butter, melted
  • 2 Tbsp boiling water

How to cook:
  1. Biscuit Base
  2. Line a 9” x 9“ square baking pan with parchment paper, set aside.
  3. First, melt the butter and set it aside to cool slightly.
  4. Crush biscuits in a high-speed food processor until they turn to crumbs.
  5. Pour crushed biscuits into a large mixing bowl.
  6. Add desiccated coconut and cocoa powder. Mix until well combined.
  7. Pour in melted butter, condensed milk, and milk. Mix with a wooden spoon or spatula until everything is well combined.
  8. Press mixture into lined pan, you may want to use your hands for this step to press it in and smooth out the top.
  9. Transfer to the refrigerator for 30 minutes - 45 minutes or until it’s firm to the touch. TIP: to fasten up this process, chill it in the freezer until it’s firm.
  10. Chocolate Fudge Icing
  11. In a medium sized mixing bowl, sift icing sugar and cocoa powder together.
  12. Pour in melted butter and boiling water. Use a whisk to mix it altogether until well combined, it will turn thick. Continue to whisk until smooth and no lumps of sugar and cocoa remain.
  13. Remove the base from the refrigerator and pour over the icing. Spread it out evenly using a spatula or move the pan around so it spreads out itself.
  14. Return to the refrigerator for 1 hour or until icing is just set. It won’t completely harden as it’s fudgy in texture.
  15. Remove from pan and slice into squares.
  16. Serve and enjoy!
