  • 1 cup old fashioned oats
  • 1/3 cup blended up oats (oat flour)
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon fine sea salt
  • 1/3 cup creamy peanut butter
  • 1/4 cup melted coconut oil
  • 1/4 cup honey
  • 1/3 cup light brown sugar, lightly packed
  • 1 teaspoon pure vanilla extract
  • 1 large full egg
  • 1 large egg yolk
  • 3/4 cup dried blueberries
  • 3/4 teaspoon pure vanilla extract
  • 1/2 cup powdered sugar
  • 1/16 teaspoon (tiny pinch) fine sea salt
  • 1/2 to 3/4 tablespoon milk (any milk works; I used whole milk)

How to cook:
  1. For the bars:
  2. Pre-heat oven to 325 degrees F. Line an 8 x 8 baking pan with parchment paper with an overhang.
  3. Using an electric blender, blend old-fashioned or quick oats until they resemble flour. Measure AFTER blending to ensure you have the right amount.
  4. Combine all the ingredients except the dried blueberries in a large bowl, stir until smooth and well combined. Stir in the dried blueberries, then transfer batter to your prepared pan.
  5. Bake your Wendy's Oatmeal Bar for about 23 to 26 minutes or until set at the edges (Even though the center looks slightly wet, as long as it doesn't jiggle, it's done. The bars will firm up as they cool, so be careful not to overbake.)
  6. For the vanilla drizzle:
  7. Pour all of the ingredients into a medium-sized bowl, starting with 1/2 tablespoon milk. Stir briskly until a very thick glaze forms, adding more milk if necessary.
  8. Transfer the glaze to a resealable plastic bag and cut off the very tip. Once the bars have cooled, drizzle the glaze over them.

  • 1/4 cup white sugar or 1/4 cup brown sugar
  • 1/2 teaspoon cinnamon

How to cook:
  1. PREP: Preheat the oven to 325 degrees F. Line an 8x8-inch pan with parchment paper, leaving an overhang for easy removal, and set aside.
  2. BARS: Combine all the ingredients except the peanut butter chips in a large bowl. Beat with a hand mixer until smooth. Add in the peanut butter chips and fold with a spatula to combine.
  3. BAKE: Transfer batter to the prepared pan and smooth into an even layer. Bake for 18-22 minutes or until lightly browned around the edges. They may look a bit underdone or gooey in the center, but as long as they don't jiggle at all, they are done. These bars continue to set up and firm as they cool.
  4. CUT AND SERVE: Remove bars from the oven and let cool completely in the pan. Use the parchment paper overhang to pull out the bars and cut into 12 squares with a sharp knife.
  5. OPTIONAL: (This is for the peanut butter fanatics!) Once bars are cut into squares, place 1/4 cup of peanut butter in a small resealable bag. Cut off a tiny corner tip of the bag and pipe the peanut butter on the top of the bars.

How to cook:
  1. Preheat the oven to 375 degrees F/190C.
  2. Grease and flour an 9x13 inch baking pan
  3. Sift the flour, salt, baking soda, and baking powder together into a large mixing bowl.
  4. In a large mixing bowl. Beat the butter, brown sugar, dark brown sugar, and granulated sugar in until fluffy.
  5. Mix in the eggs one at a time, then add the vanilla, cinnamon, and nutmeg.
  6. Mix in the flour mixture and mix until combined.
  7. Stir in the oats by hand, followed by the raisins.
  8. Spread dough evenly into the pan.
  9. Spread the dough into the prepared pan and smooth the top. Bake for 30 minutes. After 30 minutes, give the pan a little shake. If it jiggles in the middle, put the pan back in and try again every 5 minutes until there is no longer any jiggle.
  10. Remove from the oven and let cool 10 minutes before cutting.
  11. Best served warm, but great cooled as well.
