Old Fashion Black Walnut Cake
This recipe is my take on this old fashion cake that I added the black walnuts to the batter. I do use a hefty 1 cup of the black walnuts to get the crunch and flavor throughout the cake, but you can add a little more or less to suit your taste.

Ingredients:
  • 3 cups all-purpose flour
  • 1/3 cup cornstarch
  • 1/2 teaspoon salt
  • 2 teaspoon baking powder
  • 1 cup butter, at room temperature (2 sticks)
  • 1 cup granulated white sugar
  • 1 cup brown sugar, lightly packed
  • 5 large eggs, separated
  • 1 cup milk, 2%
  • 1 teaspoon pure vanilla extract
  • 1 cup black walnuts, coarsely chopped
How to cook:
  1. Preheat oven to 350 degrees. Grease and flour a 10-12 cup Bundt cake pan.
  2. Sift the flour, cornstarch, salt and baking powder together with a sifter or a wire whisk to combine and break up any clumps of flour. Set aside.
  3. Separate eggs, putting the yolks in one small bowl and the egg whites in a large bowl for whipping. Keep the egg whites cold until ready to whip.
  4. In the bowl of your electric mixer fitted with a paddle, cream butter, white sugar and brown sugar until it’s light and creamy, about 2 minutes.
  5. Add one egg yolk at a time, creaming after each one for about 30 seconds.
  6. Add 1/3 of the flour mixture to the batter and while mixing it on low, drizzle in 1/2 of the milk until the flour is all mixed in. Turn off the mixer and add another 1/3 of the flour mixture, turn the mixer back on to low speed and add the rest of the milk and then ending with the remaining flour mixture. After the flour mixture is incorporated into the batter, turn the mixer up to medium speed and mix well to make the batter nice and creamy, about 1 more minute.
  7. Add the pure vanilla extract and mix for 1 minute.
  8. Fold in the chopped black walnuts.
  9. With a hand held rotary mixer, beat cold egg whites until stiff peaks form and fold into the batter, careful to not deflate the egg whites.
  10. Pour the batter into a well-greased and floured 10-12 cup Bundt style cake pan and bake in a preheated 350 degree oven for 1 hour and 15 minutes or so. Since all ovens bake differently, take a peek at the cake after about the first hour, and see if it’s turning a golden brown on top and check for doneness with a toothpick. If the toothpick comes out clean, it’s done.
  11. Cool for 3-5 minutes and invert onto a cake plate to complete the cooling.

  • 2 cups cake flour
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup butter ((room temperature))
  • 2 cups sugar
  • 5 large eggs ((separated))
  • 1 cup buttermilk
  • 1 teaspoon vanilla extract
  • 1 ½ cups chopped black walnuts
  • 1 cup shredded coconut
  • ½ teaspoon cream of tartar

How to cook:
  1. Make the cake:
  2. Preheat the oven to 350º Fahrenheit. Grease and flour 3 9” round baking pans.
  3. In a medium bowl, mix together the flour, baking soda and salt. Set aside.
  4. In the bowl of a stand mixer, beat the butter until it is creamy and almost white in appearance.
  5. Add in the sugar and beat again.
  6. Add the egg yolks only to the creamed butter. Beat 2 minutes.
  7. Add the flour mixture to the creamed butter alternately with the buttermilk. Start with the flour mixture and end with the flour mixture. Beat between each addition.
  8. Beat until the mixture is smooth, scraping the sides of the bowl as needed.
  9. Mix in the vanilla, 1 ½ cups of walnuts and coconut.
  10. Using a hand mixer, beat the egg whites and cream of tartar in a small bowl until they are stiff and can hold peaks.
  11. Fold the egg whites into the cake batter.
  12. Divide the cake batter evenly between the 3 pans.
  13. Bake for 27-30 minutes or until the cakes test done.
  14. Cool for 10 minutes before removing the cakes to a wire rack to cool completely.
  15. Make the frosting:
  16. Using an electric mixer, mix the butter and cream cheese, scraping down the sides as needed, until the mixture is light and fluffy. This will take about 3 minutes.
  17. With the mixer on low speed, add the powdered sugar, 1/2 a cup at a time, until it is thoroughly mixed.
  18. Add the vanilla and beat the frosting on medium speed for about 2 minutes.
  19. Assemble the cake:
  20. Make sure the cakes are level. Cut off any domed parts.
  21. Place one cake layer on the plate.
  22. Frost the cake with a thin layer of frosting.
  23. Place the second layer on top, then frost as you did the first.
  24. Place the third layer on top and frost the top of the cake.
  25. Frost the sides of the cake, putting on as much frosting as you’d like. We chose to make a “naked” cake. You can add more frosting if you’d like.

  • 3 cups all-purpose flour, divided
  • 1 cup butter, softened
  • 2 cups sugar
  • 4 large eggs, room temperature
  • 1 teaspoon vanilla extract

  • 1 cup whole milk
  • FROSTING:
  • 1-3/4 cups sugar

How to cook:
  1. Preheat oven to 350°. Grease and flour a 10-in. tube pan. In a bowl, toss walnuts with 1/4 cup flour; set aside. In a bowl, beat butter and sugar until light and fluffy, 5-7 minutes. Add eggs, 1 at a time, beating well after each addition. Add vanilla; mix well.
  2. Combine baking powder, salt and remaining 2-3/4 cups flour; add to creamed mixture alternately with milk. Stir in reserved nut mixture. Pour into prepared pan.
  3. Bake until a toothpick inserted in the center comes out clean, 50-55 minutes. Cool in pan 10 minutes before removing from pan to a wire rack to cool completely.
  4. In a heavy saucepan, combine sugar, egg whites, water and cream of tartar. With a portable mixer, beat on low speed for 1 minute. Continue beating on low speed over low heat until frosting reaches 160°, about 9 minutes.
  5. Pour into the bowl of a heavy-duty stand mixer; add vanilla. Beat on high speed until stiff peaks form, about 7 minutes. Spread over top and side of cake. If desired, top with additional walnuts.
