Ingredients:
- 1 unbaked 9-inch pie shell
- 2 eggs
- 1 1/4 cups sugar [I used Imperial Granulated Sugar]
- 1/4 cup all-purpose flour
- 6 tablespoons cocoa powder (not hot chocolate mix, but cocoa) [I used Divine Chocolate cocoa]
- 1/2 cup (1 stick) butter, melted
- 2 teaspoons vanilla extract
- Pinch of salt
- Garnish: fresh strawberries or other berries, or whipped cream, or vanilla ice cream
How to cook:
- Heat oven to 350F degrees.
- Place pie crust in a 9-inch pie dish, and crimp the edges. This pie won't rise high, so you don't need to worry about making the crust tall. Set aside.
- Combine all remaining ingredients in a bowl, with electric mixer or whisk by hand, and then pour into unbaked pie shell.
- Bake until set, about 30 minutes. Check pie and if it is not set at 30 minutes (if the middle of the pie jiggles too much when you lightly jostle the pie pan while it is in the oven), bake another 5 minutes longer, then remove from oven.
- Cool thoroughly before cutting. The top will likely develop fault lines and cracks while it cools. Serve at room temperature.
- Serves 8-12, depending on size of slices. It is rich, so a small slice will suffice.

Ingredients:
- 4 Ounces Above 50% cocoa chocolate bar (about 1 bar), Separated
- 1/2 Cup Salted Butter (1 stick)
- 3/4 Cup White Granulated Sugar
- 2 Eggs, beaten
- 1/8 Cup Gluten Free 1:1 Flour or White Flour (non gf)
- 1 Frozen 9 inch Gluten Free Pie Crust *See Tips and Tricks for Suggestion
- 1 Cup Heavy Whipping Cream
- 1 Tbsp Powdered Sugar
- 1 tsp Vanilla
- Strawberries - Optional for topping
How to cook:
- Chocolate Fudge Pie Filling
- Preheat oven to 350 degrees F. Poke your pie crust all over with a fork. Once oven is preheated, place pie crust in oven for 10 minutes. Take out and set aside.
- While pie shell is baking, melt butter in large microwave safe dish (about 45 seconds). Add 2 ounces of chocolate (about half a bar) and place back in microwave for 45 seconds, Stir until butter and chocolate are completely melted and combined together.
- Add sugar to butter/chocolate mixture, and mix until completely combined. Add vanilla, eggs and mix well. Add flour and fold in until just combined. Pour filling into pie crust.
- Place pie on top of a cookie sheet (for any potential overflow) and place in center rack of oven. Bake for 40-45 minutes or until pie looks set and doesn't jiggle much when given a shake. Take it out and let cool completely. Below is pie after cooking without any topping.
- Whipped Pie Topping
- In large bowl, combine 1 cup heavy whipping cream, 1 Tbsp powdered sugar, 1 tsp of vanilla and beat until semi-stiff peaks form. Smooth whipped cream mixture onto the top of the pie.
- Use remaining chocolate bar to decorate. I used a grater to grate some chocolate on top of the pie and then broke pieces apart to place on each piece before serving. Serve within the hour or place in refrigerator until ready to serve. Top with strawberries if desired. Enjoy!

- ½ cup self-rising flour
- 3 large eggs, unbeaten
- 1 ½ sticks butter, melted
- 1 ½ teaspoons vanilla extract
- 1/4 cup confectioner's sugar, optional

Ingredients:
- 1 cup sugar
- ½ cup flour
- 4 tbsp cocoa
- 2 ¼ cup milk
- 3 egg yolks
- ¼ tsp salt
- 1 tsp vanilla
- 2 tbsp butter
How to cook:
- Mix all your dry ingredients with a wire whisk in your skillet or pan of choice. Make sure to remove all the lumps of flour and cocoa.
- Separate egg yolks, saving the whites for meringue.
- Place egg yolks in a bowl and add milk, stir until blended.
- Pour milk and egg mixture into dry ingredients and stir well.
- Cook on medium heat, stirring constantly to prevent scorching. Do not leave unattended.
- Once filling thickens add the butter and vanilla extract and mix well. Remove from heat.
- Pour it into your pre-baked cooled pie shell and spread it out evenly.
- Top with meringue and bake accordingly or serve with whipped topping.
- Cool on a wire rack and serve. Refrigerate any leftovers.
