A fun simple homemade cake using a can of fruit cocktail to brighten it up and homemade icing to top it off with!

  • 2 cups flour
  • 2 cups sugar
  • 2 teaspoons baking soda
  • 2 eggs
  • 1 30 ounce can fruit cocktail
  • 1 cup sugar
  • 1 stick margarine
  • 1 12 ounce can evaporated milk
How to cook:
  1. Cake
  2. Combine flour, sugar, baking soda and eggs until batter is smooth
  3. Carefully stir into the cake batter the entire can, including syrup, of fruit cocktail
  4. Spray a 9x13 glass dish with non-stick spray and pour batter into dish
  5. Bake in a 350° pre-heated oven for 55-60 minutes until center of cake is done and cake has slightly pulled away from sides of dish
  6. Icing
  7. Combine all icing ingredients in a medium saucepan and bring to a slow boil, allow to boil for approximately 1 minute then remove from heat
  8. While cake and icing are both warm pour the icing over the cake allowing to soak in and flow down the sides of the cake where it has pulled away from the dish.

Old Fashioned Fruit Cocktail Cake
This is a cheap recipe for an old-fashioned cake my husband grew up eating. There is no fat in it, but don’t think it’s diet food. There is a ton of sugar. I try to use fruit cocktail in juice instead of syrup. Also, I usually leave off the brown sugar/nut topping. You can substitute other canned fruit for the cocktail. I have seen this will just peaches, pineapple or pears. My mother-in-law often would drizzle caramel ice cream sauce over the cake. My hubby likes it best with vanilla ice cream or whipped cream on top.

  • 1 egg
  • 1 cup sugar
  • 1 tsp baking soda
  • 1¼ cup flour
  • 1 tsp vanilla
  • 1 can (2 cups) fruit cocktail (I use the light stuff, canned in juice)
How to cook:
  1. Beat sugar, egg and dry ingredients.
  2. Add vanilla.
  3. Fold in can of fruit, juice and all.
  4. Spread in a greased 9 X 9 pan.
  5. If desired ( and you can handle more sugar!), combine brown sugar and nuts and sprinkle over cake batter.
  6. Bake 325 degrees for 60 minutes.

  • 2 cups All Purpose Flour
  • 2 tsp Baking Soda
  • 1/2 tsp Salt
  • 2 Eggs
  • 1 1/2 cups Sugar
  • 1 tsp Vanilla
  • 1 16 oz can Fruit Cocktail (with juice, don't drain)
  • 1/3 cup Light Brown Sugar
  • 1/2 cup Shredded Coconut
  • 3/4 cup Sugar
  • 1/2 cup Evaporated Milk (or whole milk)
  • 1/2 cup Butter
  • 1 tsp Vanilla
  • 1/2 cup Chopped Pecans
  • 1/2 cup Shredded Coconut

How to cook:
  1. CAKE
  2. Preheat oven to 350° F.
  3. Sift together the flour, salt, and baking soda into a mixing bowl.
  4. In another mixing bowl, beat the eggs.
  5. Stir in the sugar and vanilla. Mix well.
  6. Add the entire can of fruit cocktail, with the juice. Stir well until sugar dissolves.
  7. Add the wet ingredients to the dry ingredients. Mix together until well combined.
  8. Pour the batter into a greased/sprayed 9"x13" baking dish.
  9. Mix together the coconut and brown sugar. Sprinkle over the cake batter.
  10. Bake at 350° F 30 to 40 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  11. ICING
  12. Let cake cool for about 30 minutes. While the cake is cooling make the icing.
  13. Add the sugar, butter and evaporated milk to a sauce pan and bring to a boil. Boil for 2 minutes. Remove from heat, stir in vanilla (you can add in optional coconut and/or chopped pecans if you want).
  14. Pour over the still warm or cooled cake. When the cake and icing are completely cooled, cover with foil or a lid.
