  • 1 cup butter (softened to room temperature)
  • 1 cup canola or vegetable oil
  • 1 cup granulated sugar
  • 1 cup powdered sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 4 cups all-purpose flour
  • 1 teaspoon cream of tartar (can substitute 2 teaspoons lemon juice or white vinegar)
  • 1 teaspoon baking soda
  • 1 teaspoon salt

How to cook:
  1. Using a hand or stand mixer fitted with the paddle attachment, cream together the butter, oil, granulated, and powdered sugar until the mixture is light and fluffy. Add eggs and vanilla; blend well.
  2. Sprinkle flour, cream of tartar, baking soda, and salt over the dough. Mix on low speed just until combined. Chill dough in the refrigerator for 1-2 hours.
  3. When ready to bake, preheat oven to 350 degrees F and line baking sheets with parchment or silicone mats. Scoop dough into balls and arrange on the baking sheets. If you prefer a tall, puffy cookie, bake as-is. If you prefer a thinner, more crisp cookie, flatten each slightly with the bottom of a drinking glass.
  4. Bake for 9-11 minutes, just until the centers are set and the edges have a slight golden tinge. Cool on the baking sheets for 5-10 minutes, then transfer to a wire rack. Enjoy!

Throw lots of sugar and butter in the mixer, roll the dough into balls, dunk them in some more sugar, and bake. This recipe is especially awesome because it doesn't require you to chill the dough.

Ingredients:
  • 1½ cups (280 g) granulated sugar
  • 2½ teaspoons baking powder
  • ½ teaspoon salt
  • Pinch of nutmeg (optional)
  • 1 cup salted butter, slightly softened**
  • 1 Tablespoon vanilla
  • 1 large egg
  • 2½ cups (320 g) all purpose flour
  • ~ ½ cup sparkling sugar
How to cook:
  1. Preheat oven to 350ºF and line two baking sheets with parchment paper.
  2. In a bowl, mix sugar, baking powder, salt and nutmeg together.
  3. With an electric mixer, add the butter and beat until light and fluffy, about 5 minutes on medium speed. Make sure to scrape down the side of the bowl at least once.
  4. Add in the vanilla and mix.
  5. Add in the egg and mix until smooth. Make sure to scrape the sides of the bowl again.
  6. Slowly spoon in the flour while the mixer is on low speed. Give the sides one last scrape.
  7. Roll the dough into balls about 1.5 - 2 Tablespoons big.
  8. Roll each ball in the sparkling sugar until completely coated and place on the baking sheet. I was able to fit 12 on each baking sheet.
  9. Bake until lightly golden brown on the edges or about 14-15 minutes.
  10. Leave the cookies on the baking sheet to cool.
  11. Store in an airtight container.
