Ingredients:
  • 2 T. extra-virgin olive oil
  • 1/2 c. mayonnaise
  • 1/4 c. white vinegar
  • 1 T. lemon juice
  • 1 T. light Karo syrup (corn syrup)
  • 1/4 c. grated Parmesan cheese
  • 1/2 tsp. garlic salt
  • 1/2 tsp. Italian seasoning
  • 1/2 tsp. dried parsley
  • 1 small head iceberg lettuce, chopped
  • 1 small head Romaine lettuce, chopped
  • 1 small red onion, sliced
  • 2 Roma tomatoes, sliced in rounds
  • 1 (4 oz.) can black olives, drained
  • 4 to 6 whole pepperoncini peppers, drained
  • 1/3 c. grated Parmesan cheese
  • 1 (16 oz.) package Caesar flavored croutons
How to cook:
  1. In a small bowl, whisk together olive oil, mayonnaise, vinegar, lemon juice, and Karo syrup.
  2. Add grated Parmesan, garlic salt, Italian seasoning, and parsley. Whisk until well combined.
  3. Use immediately, or refrigerate until serving time.
  4. Place iceberg lettuce, Romaine lettuce, tomatoes, black olives, and pepperoncini peppers in a serving bowl; toss to combine. Place red onion slices on top. Sprinkle with Parmesan cheese.
  5. Drizzle desired amount of salad dressing over salad mixture (you won't need all of the dressing). Top with croutons.
  6. Serve immediately and enjoy.
  7. Grated Parmesan is key in this recipe, both in the dressing and salad itself. Shredded Parmesan just doesn't bring the same texture and flavor, especially to the dressing.
  8. If you'd like a milder pepper, whole or sliced banana peppers can be substituted for the pepperoncini peppers if you prefer.
  9. The dressing will keep in the refrigerator just fine for about a week or so.

  • 3/4 cup oil (vegetable/canola)
  • 1/4 cup plus 2 Tbsp white vinegar
  • 1/4 cup water
  • 1 packet Good Seasonings Italian Dressing Mix
  • 1/2 tsp dried Italian seasoning
  • 1/2 tsp sugar
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/4 tsp garlic powder
  • 1/2 Tbsp mayonnaise (not miracle whip)

  • 1/4 cup extra virgin olive oil
  • 2 Tbs water (use 2 1/2 Tbs if using xanthan gum)
  • 3 Tbs + 1/4 tsp white distilled vinegar
  • 1/2 Tbs mayonnaise
  • 1 Tbs grated pecorino-romano (or romano) cheese
  • 2 tsp sugar (2 1/8 tsp if using xanthan gum)
  • 3/4 + 1/8 tsp salt
  • 1/2 tsp dried minced garlic (or garlic powder)
  • 1/2 tsp Italian seasoning (not Italian dressing mix)
  • optional: scant 1/16 tsp xanthan gum (see notes)

How to cook:
  1. Put all ingredients in a small food processor, process until smooth. (You can also just whisk it together if you're not using the xanthan gum, but that blends best in the food processor.)
