  • 500 g (1lb) chicken breasts
  • 250 g (½lb) bacon
  • 1 onion (finely chopped )
  • 4 garlic cloves (crushed )
  • 3 cups cauliflower (sliced into small florets )
  • 1 tsp fresh thyme
  • 1 cup chicken stock
  • 1 cup cream
  • 1 tsp lemon juice
  • salt and pepper (to taste )

How to cook:
  1. Place chicken breasts in between two sheets of parchment paper and gently thin out with a meat mallet or rolling pin.
  2. Drizzle with a little oil and season on both sides with salt and pepper.
  3. Heat a large, deep pan over medium-high heat. Add the chicken breasts then allow to cook for 2-3 minutes per side until golden brown. Remove and set aside.
  4. the same pan, add the bacon and cook until crisp and golden. Remove and set aside.
  5. Drain off the bacon fat, leaving 1-2 tablespoons behind.
  6. Add the onion and garlic to the pan and sauté until soft and fragrant.
  7. Add the cauliflower florets and thyme and cook for 5 minutes. Pour in the chicken stock, cream and lemon juice then season with salt and pepper.
  8. Allow to simmer until the cauliflower is almost tender.
  9. Add the chicken back to the pan along with any of its resting juices and allow to cook for another 5 minutes until the chicken is heated through and cooked throughout.
  10. Serve with side dishes of your choice.

  • 5 tsp. tomato paste
  • 5 Tbsp. olive oil, divided
  • 1 tsp. dijon mustard
  • 1/4 to 1/2 cup grated parmesan cheese, divided
  • 1 tsp. dried oregano leaves
  • 1/2 tsp. garlic powder
  • Salt
  • Black pepper
  • One medium head of cauliflower
  • 4 large boneless skinless chicken breasts (about 1 lb. total)
  • 2 tsp. Italian seasoning

How to cook:
  1. Preheat oven to 425ºF.
  2. In a large bowl whisk together the tomato paste, 3 tablespoons of the olive oil, and Dijon mustard. Note that the olive oil will not fully incorporate. That’s ok. Add 1/4 cup of the Parmesan cheese, the oregano, garlic powder, 1/4 teaspoon salt, and 1/4 teaspoon coarse black pepper.
  3. Break a head of cauliflower into florets and add them to the tomato paste mixture. Stir using a spatula to make sure the sauce is getting onto the cauliflower, which should end up stained red. Use the spatula to transfer all the cauliflower and sauce to a large baking sheet, spreading the cauliflower around the outside of the pan.
  4. Cut the chicken breasts in half width-wise (to make more square plump pieces rather than long rectangles). Put them in the middle of the pan in a single layer. Brush them with the remaining 2 tablespoons of olive oil and sprinkled with the Italian seasoning, 1/4 teaspoon of salt, and 1/4 teaspoon of coarse black pepper.
  5. Roast until cauliflower is darkened in spots and is tender-crisp when stuck with a fork and the chicken is cooked through to 165ºF, about 25 minutes. Sprinkle everything with remaining Parmesan cheese to serve.

How to cook:
  1. Roughly chop the chicken breast and cauliflower into about 1 inch pieces.
  2. Combine chicken breast and cauliflower with greek seasoning, lemon juice, and 1 tbsp of the olive oil. Mix well to combine. Let marinate for 10+ minutes.
  3. Heat a large skillet over medium high heat with the remaining 1 tbsp of olive oil. Once the oil is hot, add the chicken and veggies to the skillet and let them cook on the first side for 3-4 minutes without turning. Then cook for an additional 3-5 minutes stirring once or twice, until chicken is cooked though (165˚F internal temp.)Note: you may have to cook the chicken in batches if it won't fit flat in the skillet without piling up. Overcrowding the skillet will cause it to steam instead of searing.

  • 1 Garlic (clove)

  • 120 g Blue Cheese

How to cook:
  1. Preheat oven to 180 degrees.

  3. Drain chicken and cauliflower and roughly dice into large bowl. Slice shallots, add diced bacon and minced garlic also to the chicken mix. Roughly slice blue cheese and stir through chicken mix. Add 1 1/2 cups of grated cheese, mix well.
  4. Place chicken mix into medium casserole dish and top with remaining cheese.
  5. Cover with foil and bake in oven for 20 minutes, then remove foil and bake for another 5 minutes to brown the top.
  6. Serve with broccoli, beans, peas and carrot.
