  • 1 tbsp olive oil
  • 8 oz. white button mushrooms (sliced)
  • 2 tbsp butter
  • 1/2 onion (diced)
  • 1 lb. ground beef
  • 2 tsp garlic powder
  • 3 tbsp all-purpose flour
  • 1 tsp paprika
  • 1/4 cup dry sherry (or beef broth)
  • 4 cups low sodium beef broth
  • 1 1/2 tsp salt
  • 1/2 tsp black pepper
  • 4 cups dry egg noodles
  • 1/2 cup sour cream
  • 1 to 2 tbsp freshly chopped parsley

How to cook:
  1. Add the olive oil to a large skillet (that has a lid) and sauté the mushrooms over medium heat, until tender, about 5 to 6 minutes. Remove from skillet to a plate.
  2. Return the skillet to the stove top and melt the butter. Add the ground beef, onion and garlic powder and cook until ground beef is broken up and cooked through. Drain any fat and return skillet to stove top.
  3. Stir in the flour and paprika until thick, about 1 to 2 minutes. Splash the dry sherry into the pan and stir, scraping any browned bits from the bottom of the pan, cooking until dry sherry is evaporated.
  4. Gradually stir in the beef broth, salt and pepper. Bring mixture to a boil and add the egg noodles. Reduce heat to a simmer and cover. Stir often until noodles are tender, about 8 to 10 minutes. Return the mushrooms to the skillet and stir to combine.
  5. Stir in the sour cream and freshly chopped parsley. Serve warm and enjoy!

How to cook:
  1. Heat olive oil in a 4-5 quart pot or deep 12" skillet. Add onions and cook for 3-4 minutes, until they just start to become translucent.
  2. Crumble ground beef into the pan and cook until no long pink; about 5-6 minutes. Soak up most of the grease from the pan with paper towels. Season meat with a little salt and pepper.
  3. To the pot or skillet add beef broth, cream of mushroom soup + one can of nonfat milk, garlic and pasta.
  4. Stir to combine and bring to a boil over medium-high heat. Reduce heat to low, cover and cook for 15-20 minutes, or until pasta is tender.
  5. Sauce will be thin, but will thicken as it sits. To speed up the thickening, increase heat to medium-low and bring to a low boil for a few minutes, stirring often, until sauce is thickened to your liking.

How to cook:
  1. Mince the garlic. Add the garlic and butter to a large pot or skillet and sauté over medium heat for about one minute, or until the garlic is soft and fragrant.
  2. Add the ground beef and continue to sauté until it is fully browned.
  3. While the beef is browning, slice the mushrooms. Add the sliced mushrooms and some freshly cracked pepper to the pot with the beef. Continue to sauté until the mushrooms are soft (about five minutes).
  4. Add the uncooked egg noodles to the pot along with the beef broth, Worcestershire sauce, and Dijon mustard. Stir to combine. The liquid will not fully cover the noodles, but that's okay.
  5. Place a lid on the pot and allow the liquid to come up to a boil over medium-high heat. As soon as it reaches a boil, give the pot a stir, replace the lid, and reduce the heat to low. Allow the pot to simmer on low heat for about 7-10 minutes, stirring occasionally and replacing the lid every couple of minutes. After 7-10 minutes the pasta should be tender and most of the liquid absorbed.
  6. Once the noodles are tender, add the sour cream and fold it into the noodles until everything is rich and creamy. Give the noodles a taste and add extra salt or pepper, if needed. Roughly chop a handful of parsley leaves and sprinkle over top. Serve hot.
