  • 2 pounds halibut steaks
  • 1 egg, beaten
  • 1 tablespoon milk or water
  • 1 teaspoon salt
  • Dash pepper
  • 1 cup dry bread crumbs, cracker crumbs, cornmeal or flour
How to cook:
  1. Cut steaks into serving size portions.
  2. Combine egg, milk and seasonings.
  3. Dip fish in egg mixture and roll in crumbs.
  4. Place fish in a heavy frying pan which contains about one-eighth inch of fat, hot but not smoking.
  5. Fry at moderate heat.
  6. When fish is brown on one side, turn carefully and brown the other side.
  7. Cooking time approximately 10 minutes, depending on thickness of fish.
  8. Drain on absorbent paper.

  • 4 8 oz. halibut steaks
  • 4 tablespoon olive oil, divided
  • 2 tablespoons canola oil
  • 1 pound fingering potatoes
  • 1 tablespoon Harissa paste
  • 1 pound asparagus, ends snapped off
  • 1 cup white wine
  • ½ shallot, chopped
  • 3 sprigs fresh thyme
  • 4 peppercorns
  • 1 bay leaf
  • 3 cups water
  • 1 tablespoon lobster base concentrate
  • 1 cup heavy cream
  • Pinch saffron
  • 2 tablespoons butter
  • Salt and pepper

How to cook:

  2. Preheat oven 350 degrees
  3. Season halibut steaks on both sides with 1 tablespoon olive oil and salt and pepper. Set aside.
  4. In a medium sauce pan add water and salt (enough to taste like sea water – taste it!) to boil. Add fingerling potatoes, cover and steam 10 minutes or until ½ way cooked. Strain. Add 1 tablespoon olive oil and harissa paste to pan, toss to combine. Pour potatoes onto baking sheet and roast 10-15 minutes. Remove from oven and keep warm.
  5. Place asparagus spears on a small baking sheet, add 1 tablespoon olive and 1 teaspoon salt. Toss to coat. Roast 10-15 minutes. Remove from oven.
  6. In a medium sauce pan combine wine, shallot, thyme, peppercorn and bay leaf. Cook over medium heat until liquid is reduced by half. Add water, lobster base, heavy cream and saffron. Reduce heat to medium low or a slow gentle boil and reduce liquid to 1- 1/12 cups creamy, silky lobster sauce. This will take about 30 about minutes. Strain, saving liquid. Pour liquid into small saucepan and add butter and swirl to combine. Taste. Add salt and pepper if needed.
  7. In a large ovenproof frying pan over medium high heat add canola oil and heat until shimmery. Place seasoned halibut in hot pan. Sear on one side for 2 minutes. Once halibut has a solid sear flip fish and sear for 10 seconds. Place pan in oven and cook halibut for 6-8 minutes or until desired doneness.
  8. To serve place roasted harissa fingerlings on center of plate. Place halibut on top of potatoes and place asparagus on top of halibut. Spoon lobster saffron cream around plate and drizzle on top of asparagus.

  • 3 cloves garlic, minced
  • juice from 1 large lemon

How to cook:
  1. In a large, shallow dish, combine minced garlic, lemon juice, wine and olive oil.
  2. Use a sharp knife to cut halibut into 4 equal portions. Place portions into the dish with the marinade, turning to coat. Refrigerate for about 30 minutes.
  3. When you're ready to cook, heat 1 tbsp olive oil in a large nonstick skillet over medium heat.
  4. Remove halibut from the marinade and season with salt and pepper.
  5. Place halibut filets in the hot pan and cook, pressing down gently with a fish spatula, until a golden crust forms on the bottom of the fish, about 3-5 minutes. Try not to move the fish around the pan a lot until the crust forms to decrease sticking.
  6. Flip fish and cook in the other side until cooked through, another 3-5 minutes or until the internal temperature reaches 130-135°F (for medium).
  7. Add butter to the pan and let it melt, then spoon it over the top of the fish.
