Ingredients:
  • 1/2 cup panko bread crumbs**
  • 3 tablespoons grated parmesan cheese
  • 1 teaspoon of Old Bay Seasoning
  • 1 egg
  • 2 tablespoons milk
  • 1/3 cup flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 rockfish fillets*, 3/4 - 1 pound
  • 2 tablespoons of olive or vegetable oil for frying

How to cook:
  1. Place a large oven safe skillet into the oven and preheat to 425 degrees.
  2. In a large bowl combine together the the flour, salt and pepper. Stir then pour onto a large plate.
  3. In the same bowl combine together the panko, seasoning blend, and parmesan cheese. Stir then pour onto a large plate.
  4. Wipe out the bowl, then use it again to whisk together the egg and milk.
  5. Check the fish fillets for any bones and remove as necessary. Slice fish in half if necessary.***
  6. Dredge fish first in the flour, shaking off any excess.
  7. Dip fish into the egg mixture, allowing any excess to drip off.
  8. Coat fish in the panko mixture, shaking off any excess. Place on a clean plate and allow to rest 1 - 2 minutes so the panko can adhere.
  9. When the oven and frying pan are preheated, add the 2 tablespoons of oil to the hot pan. Allow to heat 1 minute. Carefully add fish fillets to the hot oil.
  10. Cook in the oven for 3 - 4 minutes, then carefully flip over.
  11. Cook an additional 3 - 4 minutes, then check with a meat thermometer for an internal temperature of at least 140 degrees.
  12. While fish cook, set up a cooling rack over a couple layers of paper towels.
  13. Remove fish from the pan and place on the cooling rack. Allow to drain 3 - 5 minutes prior to serving.

Panko- and Herb-Crusted Cod Fillets
Crispy broiled cod fillets, coated in a layer of butter, citrus- and herb-scented breadcrumbs.

Ingredients:
  • 7 tbsp. (3½ oz.) melted unsalted butter, divided
  • Two 1-lb. skinless cod fillets, preferably the “captain’s cut”
  • 1 tbsp. plus 1 tsp. kosher salt
  • ½ cups panko breadcrumbs
  • 3 tbsp. Italian parsley, coarsely chopped
  • Leaves from 6 thyme sprigs, finely chopped
  • Finely grated zest of 1 orange (2½ tsp.), plus orange wedges for serving
  • Finely grated zest of 1 lemon (1½ tsp.), plus lemon wedges for serving
How to cook:
  1. Preheat a broiler to its medium setting and line a baking sheet with foil. Grease the foil lightly with 1 tablespoon melted butter.
  2. Season the fish all over with 1 tablespoon salt, then transfer to the prepared baking sheet. Set aside for 20 minutes.
  3. Meanwhile, in a small bowl, stir together the breadcrumbs, parsley, thyme, orange and lemon zests, the remaining 1 teaspoon kosher salt, and the remaining 6 tablespoons melted butter.
  4. Sprinkle the breadcrumb topping evenly over the fillets, then broil until the topping is browned and the fish flakes when the center is poked with a fork, 4–8 minutes. Remove and serve immediately with the citrus wedges on the side for squeezing.
