How to Cook Beef Tenderloin with Mushroom Stuffing

Ingredients:
- 1 1/2 kilo beef tenderloin
- 1 cup dry white wine
- 1/2 cup butter or vegetable oil
- 1 small glass brandy
- 1 bay leaf
- 1 pinch thyme
- 1 medium size onion (thinly sliced)
- 10 pcs fresh mushrooms
- sliced mushrooms and parsley for garnishing
- salt to taste

- How to cook Beef Tenderloin with Mushroom Stuffing:
- Marinate the beef in white wine overnight.
- Melt the butter in a pan; add the brandy, bay leaf, thyme, and salt to taste.
- Add the mushrooms and continue cooking.
- Meanwhile drain the beef, putting aside the marinade.
- Make an incision on the narrow side of the beef with a sharp knife.
- Stuff with mushrooms, seal the two end with two pieces of meat from the inside of the fillet and tie the meat with strings to keep the stuffing inside.
- Brown the fillet on all sides in the remaining butter or oil and baste it with some wine from the marinade then cover the pan.
- Lower the heat and continue cooking for about 40 minutes or until cooked.
- Serve the steak sliced and garnished with whole mushrooms sauteed in butter and sprigs of parsley.

Ingredients:
- For the patties:
- 1 1/2 lb ground beef
- 3/4 cup bread crumbs
- 1 pc egg
- 1 tsp pepper
- 1 tsp salt
- For the mushroom gravy:
- 2 tbsp butter
- 1 tbsp garlic (chopped)
- 1/2 cup button mushrooms (sliced)
- 2 1/2 tbsp all-purpose flour
- 1 beef cube (dissolved in 1 1/2 cups water)
How to cook:
- For making the patties:
- In a mixing bowl, combine ground beef, bread crumbs, egg, salt, and pepper. Mix well.
- Get at least 1/4 cup of the mixture. Roll into a ball then flatten using your clean hands.
- Heat cooking oil in a pan. Fry the patties until brown on both sides.
- Remove from the pan then drain excess oil. Set aside.
- For making the mushroom gravy:
- Melt butter in a pan (set in medium heat).
- Add the garlic. Sauté for 1 minute.
- Add the button mushrooms. Sauté for 1 minute.
- Add the all-purpose flour. Mix until dissolved.
- Add the water with beef cube. Stir well.
- Adjust to low heat. Simmer until the sauce thickens. (Tip: if you notice that the gravy is too thick, add some water)
- Serving:
- Pour the mushroom gravy over the fried patties.
- Serve with steamed rice. Enjoy your Jollibee-style burger steak with mushroom gravy!

- 300 g sliced 1/8-inch thick then cut into wide strips
- 1 2/3 Tbsp soy sauce
- 1/8 tsp pepper, black
- 2 Tbsp oil
- 1 1/2 Tbsp garlic, crushed
- 1/3 cup onion, white, sliced
- 2/3 cup carrot, sliced into half moons
- 3/4 cup button mushroom, canned, drained (reserve liquid) and each piece sliced into 3
- 1/2 cup straw mushroom, canned (425g), canned, drained then slice each piece in half
- DEL MONTE Original Style Tomato Sauce (200g)
- 2/3 cup water
- 1 1/4 Tbsp soy sauce
- 3/4 tsp sugar, white
- 3/4 cup celery, sliced diagonally 1-inch long
How to cook:
- 1. Marinate beef for 30 minutes. Drain and reserve marinade.2. Fry beef in batches in oil until cooked. Set aside.3. Using the same pan, add 1 Tbsp oil if needed and sauté garlic, onion, and carrots until carrots are tender. Add mushrooms and cook for 3 minutes. Set aside.4. In the same pan, combine marinade, reserved mushroom liquid, DEL MONTE Original Style Tomato Sauce, water, soy sauce, and sugar. Bring to boil then simmer covered for 10 minutes over low heat.5. Add meat and vegetable mixture. Simmer for another 5 minutes. Add celery. Simmer for 1 minute.
