Pecan pie cobbler blends silky sugary pecan pie filling with an indulgent cakey topping and mouth-happy pecans in every scrumptious bite. Makes 6 to 8 servings I couldn't find a recipe, so I took it upon myself to devise this amazing dessert that combines the ease of a cobbler and the rich flavor of pecan pie.

Ingredients:
  • 6 tablespoons butter
  • 1¾ cups sugar, divided
  • 1 cup self-rising flour
  • 6 tablespoons unsweetened cocoa powder, divided
  • ½ cup whole milk
  • 1 teaspoon vanilla extract
  • ½ cup chopped pecans
  • ½ cup toffee bits
  • 1½ cups boiling water
  • Vanilla ice cream (optional)
  • Caramel ice cream topping (optional)
  • Chopped pecans (optional)
How to cook:
  1. Preheat oven to 350°. Place butter in a 9-inch square baking dish, and place dish in oven just until butter is melted.
  2. In a medium bowl, whisk together ¾ cup sugar, flour, and 2 tablespoons cocoa. Whisk in milk and vanilla until smooth. Pour onto melted butter in dish; do not stir together.
  3. In a small bowl, stir together pecans, toffee bits, remaining 1 cup sugar, and remaining 4 tablespoons cocoa; sprinkle onto batter. Slowly pour 1½ cups boiling water onto batter; do not stir together.
  4. Bake until top appears dry and set, 40 to 50 minutes. Let cool for 20 minutes; serve with ice cream, caramel, and pecans, if desired.

How to cook:
  1. Preheat oven to 400 degrees. Spray a 9X13 inch baking dish with nonstick cooking spray.
  2. In a medium mixing bowl, whisk eggs until they're well combined. Add brown sugar, corn syrup, salt, melted butter, and vanilla and whisk until evenly incorporated.
  3. Sprinkle 3 cups of chopped pecans into the prepared baking dish then add egg mixture.

  5. Use a pastry blender or 2 butter knives to cut the butter into the dry ingredients, until the mixture resembles a coarse meal.
  6. Pour in the boiling water and just stir until the mixture comes together and is mixed through. Drop large spoonfuls of dough over pecan mixture. Sprinkle with remaining 1 ½ cups pecans.
  7. Place the baking dish on a rimmed baking sheet, and bake in preheated oven for 10 minutes, then reduce the heat to 325 degrees and continue baking until the filling is firm in the center, and a knife inserted into the center comes out clean. About another 25-35 minutes.
