Ingredients:
- 3 Peaches, Pitted & Halved
- 1 Teaspoon Olive Oil
- 4 Tablespoons Butter, Unsalted
- 1 Teaspoon Honey
- 4 Sprigs Thyme
- 1 Squeeze Lemon
- 1 Pinch Kosher Salt
- 1 Pinch Black Pepper

- Preheat your grill and oil the grate to prevent sticking.
- Lay the peaches cut side up and lightly coat with the olive oil, some salt and pepper.
- Grill the peaches for approximately 5-6 minutes. We are not going to cook them all the way through on the grill.
- While the peaches are grilling, melt the butter in a pan over medium-high heat.
- Remove the peaches from the grill and dice.
- Add the peaches to the butter along with the thyme and honey. Cook for 5-7 minutes or until the peaches are softened and the sauce has thickened.
- Sprinkle just a bit of lemon over the peaches and remove the thyme stalks before serving.

- 2 tbsp Sweetener (monkfruit erythritol blend or sweetener of choice)

- Gather all the ingredients.
- Peel off skin and remove pit from peach. You can either slice or chop peaches into cubes, either way set aside once done.
- In a small saucepan, add peaches, sweetener, and 3 1/2 tbsp of water. Note - depending on how ripe your peaches are, you may have to use 3-4 tbsp of sweetener.
- Cook on medium heat until boiling, then turn down to low, stirring often and crushing peach with a soft spatula until a nice syrupy sauce forms. Roughly 10-15 minutes and will depend on how ripe the peach is. Set aside cool down.
- Once cooled, pulse in a food processor or blender until smooth. Set aside to cool. Tip- Freeze in ice cube trays and keep in ziplock for easy single portion use. It will also hold in the fridge for up to 5 days.

Ingredients:
- 6-8 medium or large peaches or 2-3 bags of frozen sliced peaches. I use 10 oz bags when using frozen)
- Juice from 1/2 a fresh lemon
- Cornstarch – optional. I like the consistency without
- 1/2 tsp vanilla
- A pinch of cinnamon – optional (I love cinnamon in everything so, omit if you don’t.)
- 2 TBS water
How to cook:
- Add everything to the Instant Pot and close the lid
- Set the valve to SEALED.
- Set button to High Pressure for 1 minute and do a quick release
- Stir the mixture until thick or add cornstarch if you need to thicken it up.
- Serve warm or cold.
- Peach Applesauce:
- Add the ingredients do the same as above except cook on high pressure for 4 minutes and do a quick release.
- Remove the ingredients and put in a food processor or blender.
- Pulse until it’s the texture you like.
- Serve warm or cold.
- Add peach compote to oatmeal, or serve with non-fat yogurt or enjoy as a side dish.
