Ingredients:
  • Two 16-ounce bags of unsweetened frozen sliced peaches
  • One 1.75 ounce box of pectin
  • 6 cups of sugar
  • 1 Tbsp of butter
  • 3 Tbsp of lemon juice
How to cook:
  1. Fill a tall soup pot or water bath canner about halfway full of water. Add 2 tablespoons of vinegar and put it on the stove to boil.
  2. Measure sugar exactly and put it in a bowl. I love using one with a pouring spout.
  3. Put the peaches in a tall soup pot. They can be defrosted or you can start from frozen. Turn on low heat.
  4. Chop the peaches as they defrost and cook until the chunks are pea-sized. If you prefer, you can puree the defrosted peaches in a food processor before cooking for a smoother texture.
  5. Bring to a boil and add pectin, butter, and lemon juice. Stir and cook for five to ten minutes.
  6. Set a timer for one minute.
  7. Dump the sugar in all at once and stir constantly as you scrape the sugar down from the sides of the pot. Keep cooking it until the boil is so vigorous that you cannot stir it down. Start the timer and cook the jam for precisely one minute.
  8. Remove the pot from heat.
  9. Ladle hot jam into a jar, Wipe the rim of the jar with a damp dishcloth.
  10. Put a lid on the jar, make sure it sits level and flat.
  11. Screw a canning ring in place to secure the lid and hand-tighten.
  12. Put the jar in the water bath.
  13. Repeat with the rest of the jars until you have used all the jam.
  14. It is ok to mix sizes of jars if you don't have enough to fill a large one.
  15. Process jars in the hot water bath for ten minutes.
  16. Remove each jar from the water bath with the jar lifter and set gently on a cooling rack.
  17. Do not touch the jars until they are completely cool.
  18. If jars do not seal, refrigerate and use within 3 weeks or so.

  • 3 cups fresh peaches ((about 2 lbs. fully ripe peaches))
  • 4 1/2 cups granulated sugar
  • 2 Tablespoons fresh lemon juice
  • 3/4 cup water
  • 1 box Sure Jell Fruit Pectin

How to cook:
  1. Have ready clean plastic or glass containers and lids.
  2. Peel and pit peaches. Finely chop or pulse fruit in a food processor until diced. Measure exactly 3 cups of diced peaches into a large bowl (You can eat any extra diced peaches leftover after measuring 3 cups.)
  3. Add one cup of sugar to the bowl and stir well. Rest for 5 minutes. Repeat with remaining sugar, adding it a little at a time and resting in between. Stir in lemon juice. Let mixture rest for 10 min.
  4. Taste the mixture and if it's still grainy from the sugar don't proceed until the sugar has dissolved! (If needed, you could place the heat-proof bowl or peaches over a saucepan of warm water on the stove. Gently stir the mixture and the heat will help the sugar to dissolve.)
  5. Meanwhile, add the water and pectin to a small saucepan and stir to combine. Bring mixture to a boil, stirring constantly. Boil and stir for 1 minute, then remove from heat and add to the peach mixture. Stir jam for 3 minutes.
  6. You should notice the jam has thickened a little. A will continue to thicken a bit more as it rests. (See notes, if it is still very runny).
  7. Fill your glass or plastic containers, leaving 1/2 inch headspace. Wipe rim of jars clean and cover with lids. Let stand at room temperature 24 hours. (This allows the jam time to set up, but feel free to enjoy one of the jars right away!)
  8. Store jam in the refrigerator for up to 3 weeks or freeze for up to 1 year.

  • 4 cups peaches (crushed)
  • 3 tbsps lemon juice (bottled)
  • 1 1/2 cups sugar
  • 1 packet Mrs. Wages No Cook Freezer Jam Pectin
How to cook:
  1. Wash, peel, and crush peaches.
  2. Frozen Peaches - allow to thaw in refrigerator or defrost in the microwave.
  3. Measure 4 cups of crushed peaches into a mixing bowl or saucepan.
  4. For thicker jam, bring peaches to a boil and remove from heat. Continue with following instructions.
  5. Add lemon juice and sugar to peaches and combine thoroughly.
  6. Let peach mixture stand for 10 minutes.
  7. Slowly stir pectin into peaches, combining thoroughly.
  8. Stir mixture for 3 minutes. Set a timer to be sure you stir for the required time.
  9. Ladle jam into freezer containers, leaving 1/2" headspace.

Ingredients:
  • 3 1/2 pounds peaches (1 lb = 3 to 4 medium peaches), peeled, pitted, and cut into chunks
  • 2 1/2 cups sugar (remember, you can start with less sugar and add more if needed, but don’t add too little or your jam won’t gel.)
  • Juice from one lemon (Lemon juice is naturally high in pectin and will help the jam set.)
How to cook:
  1. Add peaches and lemon juice to medium saucepan. Bring to boil over med-high heat, using a spatula or masher to crush peaches to desired consistency.
  2. Reduce heat to medium. Add sugar. Bring peaches back to a boil, stirring frequently.
  3. Continue to boil and stir, until peaches reduce and reach desired consistency. (Anywhere from 15 to 25 minutes – jam should stick to spoon when lifted and turned sideways.)
