- 6-7 cups chopped peaches** about 3 ½ pounds
- A large bowl of water and ice
- 3 ounces peach Jello*** (1 small box)
- 1 cup granulated sugar
- 4 tablespoons cornstarch
- 1 1/2 cups 7UP or Sprite

Ingredients:
- 1 3 oz pkg. peach Jell-O (I couldn't find the 3 oz size, so I used half of a 6 oz. box)
- 2/3 cup boiling water
- 1 cup vanilla ice cream
- 1 8 oz container of Cool Whip, thawed
- 5 fresh peaches (peeled and cut into bite-sized pieces)
- 1 graham cracker crust
How to cook:
- In a large bowl, add boiling water to gelatin. Mix until the gelatin is completely dissolved.
- Add the vanilla ice cream and stir until melted. Add the Cool Whip and mix until well combined.
- Fold in the peaches and pour into the pie crust. Refrigerate for at least 2-3 hours before serving. Slice, serve and enjoy!
