- 3 Tbsp Peanut Butter (Natural, Creamy)
- 3 Tbsp Whole Wheat Flour
- 1/2 Tsp Vanilla Extract
- 1/2 Tsp Baking Powder
- 1 Tbsp Chocolate Chips
- 1 Tbsp Maple Syrup
- 1/4 Cup Almond Milk
How to cook:
- Mix your flour and baking powder in your mug or a bowl.
- Add your peanut butter, maple syrup and vanilla extract and combine all ingredients until a batter is formed.
- Finally add in your chocolate chips.
- Place in the microwave for approximately one minute and thirty seconds until the batter has risen. Enjoy warm.

- 2 tbsp natural peanut butter (needs to be drippy, not dry)
- 3 tbsp unsweetened plant-based milk
- 2 tbsp pure maple syrup
- 1/2 tsp vanilla extract
- 5 tbsp oat flour (pulse GF rolled oats in a blender until a soft flour forms)
- 1/4 tsp baking powder
- 1/8 tsp mineral salt (plus extra sprinkle for topping, see notes)
- pinch of cinnamon
- 1 tbsp mini dairy-free chocolate chips (plus more for topping)
How to cook:
- Start by adding your wet ingredients into your 12 oz mug (plant-based milk, maple syrup, vanilla extract and peanut butter). Make sure your peanut butter is creamy and drippy, not hard and dry. Whisk very well.
- Next, add in your dry ingredients (oat flour, baking powder, salt and cinnamon). Whisk very well.
- Now add in your chocolate chips, stir, and then top with more chocolate chips.
- Microwave for 1 min and 15 seconds. Important: ALL microwaves vary! Mine is 1000W. You will want to watch this very closely and only cook until the center is done but moist (it will cook up a little bit more as it cools).
- Cool for a minute or so, top with additional peanut butter and a sprinkle of salt and enjoy!

- 50g vegan butter, melted
- 75g smooth peanut butter

- Before doing anything, you need to heat treat the flour. Place the flour into a microwave-safe bowl and cook for 1 minute 15 seconds, at 15-second intervals. Your flour will then be safe to use.
- To a small bowl, add the flour, sugar, vegan butter and peanut butter. Mix.
- Then pour in the plant milk and vanilla. Mix again so that all the ingredients are fully combined.
- Pour the mixture into 2 small mugs/ramekins.
- Cook the cakes, one at a time in the microwave for 1 minute. Every microwave is different so some may require 1 minute 15 seconds.
- Pour extra melted peanut butter over the top and enjoy!
