  • 1/2 cup cashew butter (or any nut or seed butter)
  • 1/2 cup honey (or brown rice syrup)
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/8 teaspoon almond extract (optional)
  • 4 cups brown rice crisp cereal
  • 2 tablespoons white chocolate chips (or chocolate chips)
  • 1/8 teaspoon coconut oil
  • 1 tablespoon sprinkles (optional)

How to cook:
  1. For the rice crispy treats:
  2. Line an 8-inch square baking dish with parchment paper, fax paper, or foil for easier cleanup. Set aside.
  3. Add the cashew butter and honey to a medium saucepan over medium-low heat. Whisk together until warm.
  4. Cook for 2 minutes. Stir in salt. Remove from heat.
  5. Whisk in vanilla extract and almond extract if using.
  6. Using a spatula, stir in rice crisp cereal until completely coated. Press into prepared baking dish. Put in refrigerator to set.
  7. For the topping:
  8. Add the chocolate chips and coconut oil to a small microwave-safe bowl.
  9. Heat on High for 30 seconds and stir. [Use 50% power for a stronger microwave]. Cook in 10 second intervals until melted and slightly runny. Do not overheat.
  10. Remove the rice crispy treats from the dish (keeping them in their parchment paper).
  11. Using a spoon or fork, drizzle melted chocolate over the rice crispy treats. Sprinkle immediately with sprinkles if desired.
  12. Transfer back to baking dish to refrigerator until chocolate has hardened.

  • 1 cup peanut butter
  • 4 cups Rice Krispies
  • Some roasted peanuts (preferably, not French Burnt, though Katrina tried Boston Baked Beans and they were okay)
How to cook:
  1. Line an 8 inch square pan with foil and spray it with some cooking spray or rub with butter.

  • 4 cups gluten-free or regular Rice Krispies or crisp rice cereal
  • ½ cup brown rice syrup
  • 3 Tbsp butter (for dairy-free use Earth Balance or vegan margarine)
  • 1 tsp vanilla
  • 2 Tbsp stevia chocolate chips (or regular semi-sweet)
  • ¼ tsp coconut oil (or oil of choice)
Nutrition:
  • Serving Size: 1 square (of 16)

How to cook:
  1. In a medium sized pot over the stove, melt the butter over medium heat. Add in the brown rice syrup and stir until combined.
  2. Cook the butter and brown rice syrup together until it just comes to a rolling boil.
  3. Immedietely remove from heat and add 1 tsp vanilla and stir.
  4. Quickly add in the 4 cups of rice krispies, and stir together until all the cereal is coated.
  5. Press the mixture into an 8x8 pan (I lightly sprayed mine with coconut oil). The mixture is sticky, so to avoid it sticking to your hands, press into the pan with a sheet of plastic wrap.
  6. Allow to cool in the fridge for at least an hour.
  7. When bars are almost ready, prep chocolate drizzle. In the microwave or stove, melt together chocolate chips and coconut oil...the oil helps to thin it out a touch.
  8. If using microwave, you'll only need about 30 seconds to melt it.
  9. Using a fork, drizzle the chocolate over the cooled rice krispie squares.
  10. Return to the fridge till the chocolate is set.
  11. Cut into bars, and keep stored in the fridge in the pan (covered) or transfer them to a sealed container stored in the fridge.

How to cook:
  1. Line an 8x8 baking dish with parchment paper and set aside.
  2. In a large bowl, mix together peanut butter, hemp seeds, brown rice crisps, maple syrup, vanilla, and salt until completely combined.
  3. Using a rubber spatula, press the rice krispie mixture into a flat, even layer in the prepared dish.
  4. In a small bowl, add dark chocolate chips and coconut oil. Microwave for a total of 1 minute and 30 seconds, stopping every 30 seconds to stir.
  5. Pour melted chocolate over the rice krispie mixture and tilt the dish or use a spatula to spread the chocolate evenly/cover the bar mixture entirely.
