How to cook:
- before beginning, choose your pickling jars, place all tomatoes in each, then fill with water to evaluate the amount of liquid you will need for each jar and then pour out and measure or weigh the liquid, note it down and then discard the water
- sterilize your pickling jars in boiling water, carefully remove from hot water using metal tongs, set aside and let dry
- note : I used a 500 ml jar which contained 325 grams of tomatoes, 1 garlic clove and 240 ml pickling liquid and a 1000 ml jar which contained 635 grams of tomatoes, 2 garlic cloves and 465 ml pickling liquid)
- wash and prepare the green tomatoes by making a cross-cut on the top of each about a few millimeters deep to better absorb the brine and peel your garlic and poke a few holes in each with a toothpick or skewer
- note : I used very small and smaller tomatoes, if using medium-sized tomatoes, there is no need to make a cross-cut on top, simply halve them.
- tightly place all your tomatoes in each jar with the garlic, push them in if necessary
- heat your water and add salt until dissolved, then remove from heat, add the vinegar and pickling spices and stir
- pour warm liquid into each jar all the way to the top, close well and place in a cool and dark space for 2 weeks minimum, turning the jars over every few days to evenly redistribute the pickling brine
- refrigerate the jars after opening them, serve the pickled tomatoes cold (like pickles).

- 6 quarts green cherry tomatoes
- 6 sprigs fresh dill
- 18 peppercorns
- 6 small hot red peppers
- 2 quarts water
- 2 cups white vinegar
- 4 tablespoons pickling spices
- 3/4 cup pickling salt

- Wash tomatoes and pack in clean, hot quart jars.
- Add 1 dill head, 3 peppercorns and 1 red pepper to each jar.
- Place the pickling spice in the center of a coffee filter or cheesecloth and tie.
- Bring water, vinegar, bag of spices and salt to boil.
- Remove bag.
- Cover tomatoes with brine, leaving 1/2-in. headspace.
- Process in boiling water bath 10 minutes.
- Let set 6 weeks to mellow.

Ingredients:
- whole green cherry tomatoes- big enough to have some seeds but still completely green
- equal parts white wine vinegar
- salt- 2 teaspoons per cup of liquid
- fresh garlic cloves- peeled and cut in half- four cloves per pint
- hot red peppers (either dried or fresh- two whole peppers per pint)
- whole peppercorns- about a teaspoon per pint
- dill seed- about a half teaspoon per pint
- bay leaf-one per jar
- whole mustard seed-about a teaspoon per pint
How to cook:
- Pick the tomatoes and measure them to see how many jars are needed, adjusting accordingly.
- Wash the tomatoes and sterilize the appropriate amount of jars and lids.
- Combine the vinegar, water, and salt and bring to a simmer
- Place garlic, red peppers, and other spices in the bottom of each jar and then top with the tomatoes, packing them as tightly as possible with out crushing the tomatoes.
- Top each jar of tomatoes with the hot brine, poking with a chopstick to remove any air bubbles, add more brine if necessary and then seal the jars with the sanitized lids and bands.
- Refrigerate immediately.
- The flavor will take at least a week to develop, I like to aim for a minimum of two.

- 9 cloves Garlic
- 6 tsp. Pickling spice
- 1 1/2 tsp. Red pepper flakes
- 12 sprigs Dill
- 6 slices Jalapeño
- 3 quarts Green cherry tomatoes
- 2 cups Water
- 3 cups White vinegar
- 1 cup Apple cider vinegar
- 4 tbsp. Sugar
- 2 tbsp. Salt
How to cook:
- 1 Sterilize 3 jars. Into each jar, place 3 garlic cloves, 2 tsp pickling spice, 1/2 tsp red pepper flakes, 4 sprigs of dill, and 2 slices of jalapeno.
- 2 Poke each tomato on the bottom before putting it in a jar to prevent it from exploding. Pack each jar with green tomatoes.
- 3 In a pot, combine the water, all vinegar, sugar, and salt and bring to a boil.
- 4 Fill the jars with brine, leaving 1/2-inch headspace. Wipe the jar rim and cover the jars with a lid and ring.
- 5 Set the jars on a clean towel and cool. Allow jars to cool at room temperature before placing in the fridge.
- 6 Let the green tomatoes sit for 7 days for them to develop the best flavor. Use the tomatoes up withing a couple of months.
