- Combine warm milk, yeast, and sugar in a small bowl. Let sit until yeast becomes foamy. Add mixture to the bowl of a stand mixer. Continue to add eggs, sugar, melted butter, vanilla extract, orange zest, bread flour, and kosher salt. Attach the dough hook and knead dough in the mixer for 10 minutes.
- Add dough to a large well oiled bowl. Cover with plastic wrap and allow the dough to rise for about 1 1/2 hours, until the dough has doubled in size. While the dough is rising, prepare the cranberry filling and allow it to cool completely before using.
- Remove dough from the bowl onto a well floured work surface and using a dough roller, roll out into a 12x18 rectangle, cutting off any excess dough. Spread the cranberry filling so that all of the dough is covered. Roll the dough, lengthwise, into a log.
- Preheat oven to 350 degrees F. Using a serrated knife, cut 1 inch pieces and place in a Calphalon Nonstick 9-inch cake pan. Cover with a towel and allow the rolls to rise again for 20-30 minutes, until puffy. Bake for 25-30 minutes.

- In the bowl of a stand mixer fitted with the dough hook attachment combine warm milk, sugar, and yeast. Stir together with a whisk then let sit for about 5 minutes until foamy.
- Meanwhile combine flour, cornstarch, and salt in a small bowl. Set aside.
- Add the eggs to the milk mixture and whisk until combined.
- With the mixer running on low, add the flour mixture. Increase speed to medium and mix until the dough comes together, about 1 minute.
- With the mixer running on medium, add butter, one piece at a time. Add the orange zest.
- Continue to mix for 10 minutes until the dough is smooth and comes away from the sides of the bowl. If the dough is still wet after 10 minutes, add one or two tablespoons flour until the dough comes away from the sides.
- On a lightly floured surface, knead the dough into a smooth ball. Place in a lightly greased bowl, cover with plastic wrap, put it in a warm place and let rise until doubled in size, about 1.5-2 hours.
- Meanwhile make the cranberry jam: Combine cranberries, sugar, orange juice, and orange zest in a medium saucepan and bring to a boil. Reduce heat to medium and let simmer gently for about 15 minutes, until most of the cranberries have burst open. Let cool completely.
- Punch down the dough and roll it out into a 18x18 inch square. Spread the cooled cranberry jam on top, leaving a 1-inch border.
- Starting with the edge nearest you, carefully roll dough into a cylinder, pinch lightly to seal seam, and cut into 12 pieces with a sharp knife.
- Arrange rolls in a lightly greased 13x9-inch baking pan. Cover with plastic wrap and let rise in a warm place until doubled in size, about 1 hour. (Or refrigerate overnight, see instructions above.)
- Preheat oven to 350°F (180°C).
- Discard plastic wrap and bake rolls until golden brown, about 35 to 40 minutes. Then transfer pan to a wire rack.
- Make the glaze: Whisk the powdered sugar, orange juice, and orange zest together until smooth. Drizzle or spread over warm rolls. Serve.

- Start by preheating the oven to 200 degrees and then start making your dough. Whisk the flour, sugar, salt, and yeast together in a large bowl.
- Next, combine the orange juice, orange zest, water, and butter together in a microwave safe bowl. Microwave your mixture for about 30 seconds until the butter is melted and the mixture is warm to the touch (about 110°F). Pour your mixture into the dry ingredients, add the egg and either kneed by hand or with a stand mixer with the hook attachment for 5 minutes or until it forms a soft dough.
- Turn the dough out onto a lightly floured surface and let rest for about 5 minutes. After 5 minutes, roll the dough out in a 15 x 10 inch rectangle. Using your hands, spread the softened butter on top but keeping a 1/2 border all the way around your dough clean.
- Mix together the cinnamon, pecans, dash of salt and sugar. Sprinkle it all over the dough and using your hands, gently press the filling into the dough.
- Beginning with the long side nearest to you, slowly and carefully roll the dough forward, creating a tight roll. When the entire surface of dough has been rolled, tightly pinch to seal the seam.
- Using a serrated knife, cut off the ends of the roll and discard. Cut your roll into 10-12 even orange rolls and arrange in a lightly buttered 9 x 13 baking pan or a 9-inch round pie dish.
- Loosely cover the rolls with aluminum foil move your orange cinnamon rolls to the 200 degree oven. Turn the oven off and let your rolls rise for 15-20 minutes. After they have poofed up and doubled in size, remove the foil, turn your oven to 375 degrees and bake your rolls for 15-20 minutes.
- When they are lightly golden brown, remove from the oven and let cool for 10 minutes.
- While your orange sweet rolls are cooling, whisk together sifted confectioners’ sugar, vanilla extract, orange zest and orange juice. Drizzle, pour or spread over warm rolls.
