This is a great recipe given to me by a close friend who never has enough time to cook for her family. It's quick and easy to prepare and cook, allowing you to have a yummy dinner on the table in no time. The sauce goes very well with a side of rice, too. Enjoy!

  • ⅓ cup apricot preserves
  • ⅓ cup fruity white wine, such as Gewurztraminer
  • ½ teaspoon ground ginger
  • salt and pepper to taste
  • 2 tablespoons olive oil
  • 4 boneless pork chops, 1/2 inch thick

How to cook:
  1. Mix the apricot preserves, wine, and ground ginger together in a small bowl; set aside.
  2. Season the pork chops with salt and pepper. Heat the olive oil in a skillet over medium high heat. Add the pork chops and cook until brown on each side, and no longer pink in the center, about 4 minutes per side. Remove chops from the skillet. Reduce heat to medium low. Using the same skillet, pour in the apricot preserves mixture and simmer until thickened, about 4 minutes. Return pork chops to the skillet, turning to coat each side in the sauce; cook 1 minute.

  • 4 boneless pork loin chops (1-inch thick, trimmed of fat)
  • 2 tbsp fresh chives (chopped)
  • 1 tbsp extra virgin olive oil
  • 1 tbsp fajita seasoning
  • 1/2 tsp sea salt
  • 1/2 tsp black pepper
  • 4 tbsp apricot preserves
  • 1 tsp dijon mustard
  • 1/2 tsp fajita seasoning

How to cook:
  1. Preheat oven to 450F. Line a baking sheet with tinfoil and spray with cooking oil.
  2. Place chops on the baking sheet, leaving room between each one. Drizzle with olive oil, then sprinkle with fajita seasoning, salt, and pepper evenly, flipping them over to get olive oil and seasoning on both sides.
  3. Bake pork chops for 20-25 minutes, or until they reach an internal temperature of 145F. While they're baking, whisk together apricot preserves, dijon mustard, and fajita seasoning, and set aside.
  4. Take chops out of the oven once they're done and spoon preserves over the top, sprinkle with chives, then serve.

Apricot Glazed Grilled Pork Chops
A simple basic brine combined with tangy apricot and smokey grill flavors makes for some seriously tender and juicy glazed grilled pork chops. Check out the recipe.

Ingredients:
  • 6 thick cut bone in pork chops
  • 1/2 cup kosher salt
  • 1/2 cup sugar
  • 8 cups water
  • 3/4 cup Apricot preserve
  • 1/4 cup cider vinegar
  • 1 teaspoon garlic powder
  • 1 tablespoon paprika
  • extra salt to taste
How to cook:
  1. Start by preparing the brine. Combine sugar, salt and water in a saucepan and heat gently, stirring until granules have dissolved. Allow the mixture to cool and return to room temperature.
  2. Place pork chops in a bowl or large zip top bag, and add in cooled brine so meat is completely immersed. Cover or seal, and place in fridge for 2-6 hours.
  3. Heat a grill for two zone cooking. Instructions for doing this can be found linked in the post above.
  4. Prepare the glaze by combining the preserves, vinegar, garlic powder and paprika in a small saucepan. Heat 3-5 minutes over a low flame and stir to combine. If you are using preserves that have larger fruit chunks, you will need to strain your glaze at this stage, then return it to the pan.
  5. Remove the chops from brine, and place onto the direct heat/ hot part of the grill. Sprinkle with a little extra salt. Cook 4-6 minutes until color has developed, then flip and cook on the other side.
  6. Once your chops have developed a deep brown color with grill marks, move them to the cool size of the grill. Brush with the glaze and continue cooking, turning the chops every 4-6 minutes and applying more glaze until the internal temperature reaches 143f. Remove from grill.
  7. Coat with one final application of glaze before serving.

  • 2-4 New Zealand Pork Chops (2 cm thick)
  • Olive Oil
  • Salt & Pepper
  • 1/4 Onion, finely diced
  • 1/4 Cup Apricot Jam
  • 1 Tablespoon Soy Sauce
  • 2 garlic cloves, finely crushed
  • Spring Onions to Serve
How to cook:
  1. Prepare the pork chops, you may wish to remove any skin before cooking
  2. Brush the pork chops with a little olive oil and sprinkle with salt & pepper to season
  3. Place a frying pan over a medium to high heat and add a little olive oil
  4. Place the pork chops in the frying pan and cook for 6 minutes on the first side
  5. While the pork chops are cooking finely dice the onion, and set aside with the apricot jam, soy sauce and garlic.
  6. After the first 6 minutes turn your pork chops and cook for a further 2 minutes
  7. After this time remove the Pork Chops from the pan and set them aside to rest for 2 minutes
  8. Add the onion to the pan the meat has just come from and quickly sauté until translucent, up to 2 minutes.
  9. Add to this the apricot jam, soy sauce and garlic and stir for 2 minutes until it begins to come together and thicken
  10. Remove from the heat and place the pork chops into this pan and quickly turn to coat in the glaze
  11. Serve immediately, sprinkle with spring onions to garnish.
  12. Enjoy!
