Minced Pork Meatloaf

This recipe serves 4 people

Ingredients:
  • low cal spray oil
  • 1 onion, diced
  • 1 garlic clove, crushed
  • 500g pork mince
  • 240g fresh wholemeal breadcrumbs
  • 1 tsp dried oregano
  • 1/2 tsp sea salt
  • 1 tsp black pepper
  • 2 eggs, beaten
  • 500ml beef stock
How to cook:
  1. Preheat the oven to 190C/Gas 5. Heat low cal spray oil in a large frying pan and gently fry the onion for 5 minutes or until softened, stirring occasionally. Add the garlic and cook for 1 minute more, stirring constantly. Tip the onion and garlic into a large bowl and add the mince, breadcrumbs, oregano, salt and pepper. Mix everything well with clean hands, then add the beaten eggs and mix again. Form the mixture into a rough ball. Place the ball in the centre of a sturdy roasting tin and shape it into a long loaf, about 4cm high. Sprinkle the remaining breadcrumbs on top and pat them lightly onto the outside of the loaf. Pour 300ml of the beef stock around the base of the meatloaf. Bake in the centre of the oven for 20 minutes, then pour the remaining stock into the tin and return to the oven for 15 minutes until cooked through. Test it’s cooked by placing a skewer through the middle. If juices run clear, its done. Transfer the meatloaf a warmed serving platter and cover loosely with foil. Ingredients:
  • 800 grams of lean pork mince
  • Italian tomatoes, chopped
  • 5 ounces of fresh baby Pomodorino tomatoes
  • 1 teaspoon of cinnamon
  • 1/2 teaspoon of paprika
  • 2 cloves of garlic, finely chopped
  • 1 Knorr chicken gel stock cube
  • 1 large onion, finely chopped
  • handful of basil
  • 1 red chilli, finely chopped
  • 50 grams of pasta penne (uncooked weight)
  • olive oil

How to cook:
  1. Saute the onion, garlic and chilli on a frying pan with olive oil, cook until brown.
  2. Add the lean pork mince.
  3. Next, add the cinnamon and paprika.
  4. Once the mince has browned, add the Italian tomatoes and stir in the stock cube.
  5. Next is to add the Pomodorino tomatoes once the mince has absorbed the stock cube.
  6. When it almost finished cooking, add the roughly chopped basil.
  7. Next up is the penne pasta. I used ordinary white pasta, but you may prefer wholegrain. This part is where I changed the recipe because I chose not to cook the 400 grams of pasta, as recommended, and then add the entire amount into the sauce. Instead, I measured out 50 grams of penne (uncooked weight), cooked that and then added it to 200 grams of mince ragu.
  8. Finally, add the sauce and the cooked pasta together and Voila! A simple to make, low carb, high protein and very healthy nutritious meal and the best thing about it, the cost of the ingredients won't break the bank!

Ingredients:
  • 500 g Pork Mince (5% Fat or Lower)
  • 200 g Pasta
  • 100 g Chopped Onions
  • 100 g Mixed Peppers
  • 50 g Mushrooms
  • 2 Tins Tomatoes (Chopped or Whole)
  • 2 tsp Oregano
  • Salt & Black Pepper
  • Frylight
Nutrition:

How to cook:
  1. Put the pork mince into a bowl, add the dried oregano or any other herbs and or flavours of your choosing. This is where you can be a little experimental.
  2. Mix the mince and herbs together until it is all combined.
  3. Once the pork meatball mixture is ready, take a spoonful of the mixture and put it into your hand. Roll the mixture around in your hands to make your meatball shape and size, the repeat until the mixture is all used up.
  4. If you don't chop up and freeze your onions, peppers etc, this is the time where you need to cut them all up.
  5. Fill a pan with water and put on a low heat, while you are cooking the pork meatballs and making the sauce.
  6. Put the meatballs into a large deep frying pan, you won't need to add any Frylight as the meatballs will already contain some. Cook on one side until golden, then turn them over and repeat.
  7. Once the meatballs have been cooking on a couple of sides, take them out and leave them while we make the sauce.
  8. Empty the frying pan, make sure there is not fat left from the meatballs. Spray a couple of squirts of FryLight into the frying pan and add the onions and peppers and cook until ready. Once they are cooked, add the 2 tins of tomatoes. If you used whole tomatoes you will need to crush them to that they make a sauce. If you use chopped tomatoes, then this should already be done. You may want to add some herbs here, do so, but only a teaspoon. Season with salt and pepper.
  9. Now that the sauce is near enough made, turn to a medium heat, add the pork meatballs and leave to cook for 20 - 25 minutes or until the meatballs are cooked all the way through.
  10. I usually time it by putting the pasta into a pan of medium water and leaving that to cook, again around 20 - 25 minutes. Once the pasta is cooked, the meatballs are normally cooked, but do check.
  11. Now serve and enjoy.

  • 500 g lean 5% fat pork mince
  • 1 green pepper (chopped)
  • 1 yellow pepper (chopped)
  • 2 onions (chopped)
  • 1/2 tsp smoked paprika
  • 1 courgette (grated)
  • 2 400g tins of baked beans
  • 2 chicken or veg stockcubes
  • 1 tbsp tomato puree
  • 650 g potatoes, quartered ((skins on for rustic mash if you prefer))
  • 10 or 20 g low fat grated cheese (*used as part of my Slimming World allowance, or needs counting)

How to cook:
  1. Fry the mince meat and onions together until softened.
  2. Now add the peppers and courgette and fry for a further 5 to 8 minutes until softened.
  3. Now transfer to the slow cooker and add the beans, puree, stock cubes and seasoning and cook high for 3 hours, or low for 6.
  4. Now preheat your oven on 200 degrees or gas mark 6, meanwhile boil potatoes until you can easily prick with a fork.
  5. Drain and mash the potatoes, then add the milk and seasoning until you get the consistency you want.
  6. Using a large baking dish, layer with the meat mixture, then spead the mash on top and create grooves with a fork before sprinkling with a pinch of cheese
