Trying out different recipes with my newly stocked spice cupboard. My husband loved this and gave me a thumbs up...I happened to not feel well that day and I could not eat very much..funny how a persons taste buds go haywire if you start to feel under the weather. The kitchen smelled wonderful, and my husband was wanting his dinner the moment he walked in the door. My two dogs were doing somersaults as I cut the roast and hoping for a piece that might make it to the floor.   • 2 to 3 pound(s) pork loin roast
  • 2 teaspoon(s) brown sugar
  • 2 teaspoon(s) coriander, ground
  • 1 1/2 teaspoon(s) cumin, ground
  • 1/4 teaspoon(s) salt
  • 1 teaspoon(s) garlic, minced
  • 1 teaspoon(s) chili paste
  • 1 teaspoon(s) white vinegar
  • 1 teaspoon(s) olive oil, light
How to cook:
  1. Mix all the paste ingredients with the olive oil in a small bowl to make the paste. If your roast is large, make a double batch of paste.
  2. Rub the paste all over the roast and put into a Ziploc bag and let rest in the refrigerator for at least a few hours.
  3. Oven: pure convection: 350 degrees or Oven: bake: 375 degrees Let roast come to room temperate while oven is preheating.
  4. Use a baking sheet (lined with foil)or a broiler pan. Line the bottom of the broiler pan with foil for a little easier cleaning.
  5. Remove the roast from the bag and lay in pan, fat side up. Bake: 1 - 1 1/2 hours depending on the size of the roast. Pure Convection: 1 - 1 1/2 hours depending on the size of the roast. Use a meat thermometer inserted in the middle of the roast...145 to 155 degrees for pork to be done. Check temp after an hour and adjust time if needed.
  6. Let the roast stand for 5 minutes, tented with foil before slicing.

Roasted pork does not have to be scary, difficult or unhealthy. This super simple one pot garlic and herb pork loin roast uses a lean pork loin! It's perfect for any fancy dinner party or a simple weeknight dinner.

  • 1 pork loin (trussed, 5-6 pounds)
  • 1 cup white wine
  • 3 rosemary sprigs
  • pinch of red pepper flakes
  • 5 cloves of garlic
  • 1/4 cup of olive oil
  • 8-10 small red or white potatoes (skin on and washed)
  • salt and pepper to taste
How to cook:
  1. Whip up the marinade of white wine, olive oil, garlic, red chili flakes, rosemary, salt and pepper. Use a blender or food processor as it makes it way easier. Taste the marinade make sure it tastes good and seasoned.
  2. Spray your pan down with olive oil or pan spray. Cut your potatoes in quarters and place them cut side face down on the pan on the edges of the pan. Place the pork right in the middle of them. Season the pork with salt and pepper.
  3. Pour marinade all over your roast and let it drip down on the taters. Oh by the way…see how my pork is trussed? I bought it that way. Your butcher will do that for you if you ask nicely.
  4. Let that marinade for at least 30 minutes and up to over night.
  5. Preheat oven to 400 degrees and let it cook for about 30-40 minutes or until your internal temperature is at 145. Let it rest for 10-15 minutes. Slice and enjoy!

  • 4 pound pound pork loin roast ( (please note the weight of your roast, you may need to adjust))
  • 2 teaspoons fresh rosemary leaves
  • 2 teaspoons Kosher salt
  • 5 cloves garlic
  • 2 tablespoons olive oil

How to cook:
  1. Preheat oven to 350 degrees. Use either a mortar and pestle, or a food processor, add rosemary leaves, salt, garlic, and olive oil. Mash or pulse until a paste is formed. Place roast on a wire rack on a baking sheet fat cap side up.
  2. Spread rosemary and garlic paste over the roast. Bake for approximately 1 hour and 20 minutes. Check roast for temperature with a meat thermometer.
  3. When the temperature is between 145 to 160 degrees remove the roast for from the oven. You may need to adjust the cooking time. All ovens and cuts of meat are different. Allow roast to rest for about 10 minutes before carving. If desired serve with pan juices.
Notes: The Easiest Way to Bake Pork Shoulder in a Convection Oven, Cook the shoulder for 2 1/2 to 3 hours or until the meat has reached a tender consistency. Allow the meat to sit for 10 minutes and slice it open to serve.

How to cook:
  1. Preheat oven to 350°F.
  2. Mix together black pepper, garlic powder and salt. Rub it all over pork.
  3. Put the roast on a rack in a roasting pan. If you don’t have a rack use 3 stalks of celery lying side by side.
  4. Roast until internal temperature is between 145-160°F, 20-25 minutes per pound.* 145°F is considered safe for pork according to the USDA. It will be moist and slightly pink in the center. If you prefer your pork fully white and well done, then go with the 160°F temperature.
  5. Cover roasting pan with foil and let rest for 30 minutes.
  6. Heat oven to 475°F. Uncover roast and remove the thermometer. Put roast into a clean pan and roast for another 10 minutes.
  7. Carve and serve immediately.
Notes: How To Roast Pork Loin In Convection Oven?, The greater fan speeds allow the outside to crisp and brown. Fill the bottom of the roasting pan with chicken stock, then insert the loin inside and bake it.
