Great and easy potato casserole packed with bacon, Cheddar, and green onions. Sometimes fresh cream isn't at always hand, but I tend to keep a tin of evaporated milk in the pantry.

Potato bake

Sometimes fresh cream isn't at always hand, but I tend to keep a tin of evaporated milk in the pantry. Here is a superb Potato Bake (or Scalloped Potato) recipe which you can knock out to keep the family happy and full.

Ingredients:
- Knob of butter or rice bran oil spray (for greasing the dish)
- 1 kg potatoes (washed and sliced)
- 1 large onion (sliced)
- 1 tin of evaporated milk (375ml)
- 1/2 cup chicken stock
- salt, pepper and nutmeg
- Handful grated tasty cheese
How to cook:
- Preheat your oven to 200 °C.
- Grease your dish (think something rectangle or oval, 5cm deep, that is ovenproof and looks great on the table to serve)
- Layer half the sliced potato on the bottom of the dish, then lay half the onion.
- Pour over the evaporated milk, which you've whisked together with the chicken stock, salt, pepper and nutmeg.
- Repeat the layers: potato, onion and drizzle over the last of the milk/stock.
- Season and sprinkle with the cheese (we like tasty but any cheese if fine, you can also omit).
- For a crispy top on the potato bake, sprinkle a layer of dukkah over the cheese (breadcrumbs is fine too).
- Cover your potato bake tightly with foil and bake half an hour until potatoes are just tender.
- Remove the foil and cook for another 20 minutes to get a golden, crisp top. Creamy mixture will thicken and bubble deliciously up the sides. Serve straight to the table, steaming and golden on a pot holder or heat resistant mat.
- Delicious with steak or chicken.

- ● 8 medium potatoes (about 2 1/2 to 3 pounds total), peeled and cut into 1-inch chunks
- ● 1 cup NESTLÉ® CARNATION® Evaporated Milk
- ● 1/2 cup light sour cream
- ● 1 teaspoon salt
- ● 1/2 teaspoon ground black pepper
- ● 2 cups (8-ounce package) shredded 2% cheddar cheese, divided
- ● 6 slices bacon or turkey bacon, cooked and crumbled, divided
- ● Sliced green onions (optional)
How to cook:
- Place potatoes in large saucepan. Cover with water; bring to a boil. Cook over medium-high heat for 15 to 20 minutes or until tender; drain.
- Preheat oven to 350° F. Grease 2 1/2- to 3-quart casserole dish.
- Return potatoes to saucepan; add evaporated milk, sour cream, salt and pepper. Beat with hand-held mixer until smooth. Stir in 1 1/2 cups cheese and half of bacon. Spoon mixture into prepared casserole dish.
- Bake for 20 to 25 minutes or until heated through. Top with remaining 1/2 cup cheese, remaining bacon and green onions. Bake for an additional 3 minutes or until cheese is melted.

Sprinkle with cheese.
- Bake for 25 to 30 minutes or until potatoes are tender and cheese is light golden brown.
