Ingredients:
  • 1 tablespoon of olive oil
  • 1/2 medium onion (diced)
  • 1 jalapeno (diced)
  • 2 cloves garlic (diced)
  • 2 cups cooked (shredded pork)
  • 4 flour tortillas
  • 1 14.5 ounce can refried beans, divided
  • Prepared pork mixture (divided)
  • 1 cup shredded pepper jack cheese (divided)
  • 1/2 cup guacamole (divided)
How to cook:
  1. Heat olive oil in a large skillet over medium heat. Add onions, garlic and jalapenos; saute until slightly softened, about 3 minutes. Add shredded pork and cook until heated through, about 3 minutes. Set aside.
  2. Preheat the broiler setting on your oven.
  3. Lay flour tortillas on a large cookie sheet (Note: depending on the size of your cookie sheet you may need to do these 2 at a time). In the center of the tortilla, layer, in this order: refried beans, pork mixture and pepper jack cheese. Place under broiler for 2 minutes or until cheese starts to melt. Remove from oven and top with guacamole. Roll into a burrito.

  • 1 lb pulled pork
  • 8 large flour tortillas
  • 1/2 cup shredded cheese
  • 1/2 cup black beans
  • 1/2 cup pico de gallo
How to cook:
  1. Make a quesadilla using two tortillas and a little bit of cheese.
  2. Add some pulled pork, black beans, and pico de gallo and then roll up the burrito
  3. Place the burrito seam side down on your warm cast iron skillet to seal the seam.

I found this on the back of a can of mild Ro*Tel; I have used the regular Ro*Tel also, it just depends on your heat preference. This is so quick and easy and makes a nice change to ground beef burritos.

  • 1 tablespoon vegetable oil
  • 1 lb pork tenderloin, cut into chunks (I use pork stew meat)
  • 2 (10 ounce) cans mild diced tomatoes with mild green chilies (I use Ro*Tel brand)
  • 1 (16 ounce) can refried beans
  • 8 small flour tortillas
  • 1 cup shredded cheddar cheese

How to cook:
  1. In large skillet, brown pork in hot oil.

  6. Sprinkle with cheese, roll to enclose.
  7. Place seam side down in a 13x9 baking dish.
  8. Bake in a 350* F oven 25 to 30 minutes until heated through.

These burritos were made with left over pork we had from a pig roast. The meat was roasted over an open fire at low heat for 10 hours, so it was smoky and fantastic, but you could use any kind of pulled pork.   9. Drizzle remaining barbecue sauce on burritos and sprinkle with cheese. Bake for 25 minutes.
