  • 800 g pumpkin, I prefer Jap/Kent
  • 4 cloves garlic
  • 3 sprigs rosemary
  • olive oil light
  • salt and pepper to season
  • 40 g Parmesean cheese
  • 150 g onion
  • 3 slices rasher bacon
  • 40 g Butter
  • 40 g extra virgin olive oil
  • 320 g Arborio rice
  • 60 g dry white wine
  • 1-2 tbsp TM vegetable stock concentrate
  • 720 g water

Thermomix Bacon & Tomato Risotto

Ingredients:
  • 60 g parmesan cheese
  • 15 g olive oil
  • 150 g bacon, chopped
  • 2 garlic cloves (or 2 tsp minced garlic)
  • 400 g tin diced tomatoes
  • pinch of chilli flakes (optional) - see notes
  • 1 tsp dried Italian herbs
  • sea salt and pepper, to season
  • 1 brown onion
  • 20 g olive oil
  • 25 g butter
  • 350 g arborio rice
  • 1000 g liquid vegetable stock - see notes
  • 100 g white wine
  • 100 g baby spinach leaves
How to cook:
  1. Place the parmesan cheese into the Thermomix bowl and grate on Speed 8, 8 seconds. Set aside in a seperate bowl. Wash and dry the Thermomix bowl.
  2. Place the olive oil and bacon into the Thermomix bowl and cook for 3 minutes, Varoma, Speed 1, Reverse (MC off).
  3. Add the garlic, tomatoes, chilli (optional), dried herbs, salt and pepper and cook for 12 minutes, 100 degrees, Speed 1, Reverse. Pour the sauce into the ThermoServer and set aside. Wash and dry the Thermomix bowl.
  4. Add the onion to the Thermomix bowl and chop on Speed 5, 5 seconds. Scrape down the sides of the bowl.
  5. Add the olive oil and butter and cook for 3 minutes, 100 degrees, Speed 1.
  6. Put the butterfly into place and add the rice and wine. Cook for 2 minutes, 100 degrees, Reverse, Speed 1.
  7. Add the vegetable stock and cook for a further 16 minutes, 100 degrees, Reverse, Speed 1 (MC off - but place the rice basket over the top of the MC hole to catch any splatters).
  8. Pour into the ThermoServer (with the tomato sauce) and stir through the baby spinach and reserved parmesan cheese. Allow to rest for 5 minutes.
  9. Serve with extra parmesan cheese.

CREAMY PUMPKIN AND BACON RISOTTO

Ingredients:
  • 4 slices shortcut bacon diced
  • 1/2 yellow onion finely diced
  • 2 cloves minced garlic
  • 1 1/2 cups arborio rice
  • 1 cup white wine
  • 500g can pumpkin puree
  • 1/4 butternut pumpkin cubed
  • 4 sage leaves finely chopped
  • 1 tsp nutmeg
  • 2 cups stock (chicken or veg)
  • 1 cup grated Parmesan cheese
  • dried cranberries
  • crumbled feta
  • pumpkin seeds
How to cook:
  1. Fry off the bacon in a deep pot until crispy, then remove from the pan and set aside.
  2. Cook the onion and garlic in butter until translucent.
  3. Add the rice and let it toast for a little bit before deglazing the pot with the wine.
  4. Once all the wine is absorbed, start adding the stock ladle by ladle, allowing it to fully absorb each time. Also add the pumpkin, sage, nutmeg, salt, and pepper.
  5. Once half the stock is added, pour in the pumpkin puree.
  6. Stop adding stock while the rice is still a little bit chewy. Turn off the heat and stir through the Parmesan and bacon.
  7. Top with cranberries, crumbled feta and pumpkin seeds.
