Ingredients:
  • 2 to 3 large purple sweet potatoes (about 2 lbs), peeled and chopped
  • ⅓ cup heavy cream, warmed
  • ¼ cup (½stick) unsalted butter, melted
  • 2 tablespoons maple syrup
  • ¼ teaspoon ground cinnamon
  • pinch ground cardamom
  • salt to taste

  • ¼ cup unsalted butter, melted
  • 2 tablespoons maple syrup
How to cook:
  1. Place potatoes in a large pot and fill with water.
  2. Place pot over high heat and bring to a boil. Boil potatoes until fork tender, 20 to 25 minutes.
  3. Drain potatoes and place back into the pot. Add cream, butter and a pinch of salt and mash with a potato masher or with an electric hand mixer until desired consistency has been achieved. Stir in maple syrup, cinnamon and cardamom. Season with salt to taste.
  4. For maple butter: Stir together butter and syrup until combined.
  5. Scoop mashed sweet potatoes into a large bowl and drizzle with maple butter. Finish with a sprinkle of pecans and serve.

  • 2 lbs. purple sweet potatoes
  • 2 garlic cloves
  • 2 tablespoons ghee
  • ½ tsp seal salt
  • ¼ tsp white pepper
How to cook:
  1. Peel the sweet potato and medium dice. Add to a medium pot. Fill with water till just above the potatoes. Bring to a boil, then down to a medium rolling bowl till the potatoes are soft when pricked with a fork (about 5-10 minutes).
  2. Drain potatoes, reserving 1 cup of the cooking liquid.
  3. In your high-speed blender or food processor, add 2 cloves of garlic and mince. Add potatoes, ghee, sea salt, white pepper and ¼ c of the reserve water.   3. For boiling: Fill a large pot with water and set over high heat. Once water has come to a rolling boil, add about a teaspoon of salt per liter of water. Place potatoes into the pot and boil for 12-15 minutes or until fork tender.
  4. Remove the steamer basket from the pot and drain excess water.
  5. Place the cooked potatoes in a large bowl. Add heavy cream, butter, and a pinch of salt. Using a potato masher, mash until smooth and well combined. ENJOY!

How to cook:
  1. Wash and scrub the potatoes. Pierce the potatoes with a fork 6-8 times all around. Microwave the potatoes (one at a time) for 10-13 min, flipping them over halfway through.
  2. Once soft to the touch, slice the potatoes down the center and carefully peel the skin off. Be sure not to burn your hands. Place the potatoes without the skin into a large bowl.
  3. Using a potato masher or a fork, start mashing the potatoes up.
  4. Pour 1.5 cups of milk the into the potatoes and continue mashing. If they appear dry, add 1/2 cup more of the milk.
  5. Add the room temperature butter into the hot potatoes. They should melt the butter nicely as you continue mashing and mixing.
  6. Once the potatoes are mashed to your liking, add the honey and give one last mix.
  7. Drizzle the olive oil on top of the potatoes in a circular motion and sprinkle with kosher salt and pepper.
  8. Serve warm and enjoy!
