Ingredients:
  • 1/2 cup walnuts
  • 1 cup dried dates
  • 1 14-ounce can sweetened condensed milk
  • 1/4 to 1/2 pound Ritz crackers (1 to 2 sleeves of crackers)
  • 1/2 cup powdered sugar
  • 1/4 teaspoon ground cinnamon
  • 1/4 cup milk
  • 1/2 teaspoon vanilla
How to cook:

  2. Heat the oven to 350°F and line a large baking sheet with parchment paper. Place walnuts in bowl of small food processor or chopper and blitz for about 15 seconds, or until ground until small pieces - not into dust or a paste. Add the dates, 1/4 cup at a time, and continue blending until the mixture is finely chopped. (Note: If chopping by hand, chop the dates until they are very fine, pieces no more than 1/8-inch to a side. Finely chop walnut as well.) Place chopped walnuts and dates into a small, heavy-bottomed saucepan and pour the sweetened condensed over them. Stir thoroughly, then turn the heat to medium-low. Cook, stirring frequently to prevent the mixture from scorching. Heat until it comes to a boil. Simmer for about 5 minutes or until the mixture darkens slightly and pulls away from the sides of the pan. (it will no longer be liquid. It will be a thick, gooey, sticky mixture.) Turn off heat. Use a small spatula or spoon to spread the mixture on the crackers. My grandmother places just a dab on each cracker; my mother and I use a heaping mound. It won't affect the baking time. When the crackers are covered, bake for 5 to 7 minutes, or until the crackers are just slightly more golden brown around the edges. Remove from the oven and place the baking sheet on a cooling rack. Let the cookies cool on the baking sheet. To make the glaze, place the 1/2 cup powdered sugar in a large glass measuring cup. Whisk in the cinnamon. Add the milk a little at a time, whisking vigorously. Whisk in the vanilla, and continue whisking until no lumps remain. Drizzle this glaze over the cooled cookies, and let them stand for another few minutes to let the glaze firm up. These keep very well in a covered container. They also can be frozen in a well-sealed container for up to a month.

I make these quite often and they are so good and easy. I first ate these at a family reunion and could not find out who made them so I looked around until I found the recipe.

  • 1 cup(s) pecans, chopped
  • 1 can(s) eagle brand milk
  • 1 cup(s) dates, chopped
  • 1 box(es) ritz crackers
  • ICING:
  • 8 ounce(s) cream cheese, room temperature
  • 1/4 cup(s) butter, softened
  • 1 teaspoon(s) vanilla extract
  • 1 box(es) confectioners' sugar
How to cook:
  1. Cook pecans, dates and milk over low heat until thick. Cool. Put a spoonful on each cracker. Place on a cookie sheet and bake for 8 min. at 350 degrees. Cool.
  2. ICING: Mix cream cheese, butter, vanilla and confectioner's sugar until smooth. Blend well. Ice every cracker. I make one stripe down each cracker. This makes them look prettier but you will have some icing left-over. I also rather use Town House Original Topper crackers because they have an indentation on top.

  2. Add chopped nuts.
  3. Spread on Ritz Crackers.
  4. Bake at 325 for 8 - 10 min.

  6. Heat together powder sugar, butter, vanilla, & whipping cream.
  7. Spread on top of dates & crackers.

  • 1 (14 ounce) can sweetened condensed lowfat milk (Eagle Brand)
  • 1/2 teaspoon vanilla
  • Ritz crackers, approx. 50
  • 2 c. powdered sugar
  • 4 ounce cream cheese, softened
  • 1/2 teaspoon vanilla
  • Lowfat milk, to thin to desired consistency
  • Couple drop yellow food coloring (opt.)

How to cook:
  1. Put together lowfat milk and dates in top of double boiler. Cook over hot water till creamy, but not too thick. Add in minced nuts and vanilla, stirring till well blended. Spread about 1 tsp of filling onto each crackers, keeping filling warm for easier spreading. Bake at 300 to 325 degrees for 8 to 10 min. Frost with cream cheese frosting and decorate with pecans or possibly maraschino cherries if you like. These freeze well.
  2. Mix ingredients together.
