The marinate process is key for the flavor of the ribs. For best results, use a mixture of apple cider vinegar and honey, or balsamic vinegar . Give the ribs an hour to soak in the marinade and then refrigerate for 6 hours or overnight.

This is an easy recipe for ribs which won't be tough, like smoked ribs, or fall off the bone, like braised ribs. These ribs are done the right way, and I've never had better ribs than this.

  • 1 (2 pound) slab baby back pork ribs
  • 1 teaspoon salt
  • 1 teaspoon freshly ground pepper
  • 1 teaspoon Hungarian paprika
  • 1 teaspoon ancho chile powder
  • ½ teaspoon ground thyme
  • 1 cup barbeque sauce

How to cook:
  1. Prepare an outdoor grill for indirect heat - a pile of charcoal on one side, nothing under the food. Once it is going, throw some soaked mesquite woodchips on it.
  2. Remove the membrane from the ribs if the butcher has not already. Combine the salt, pepper, paprika, chile powder and thyme; rub onto the ribs. Cut the slab of ribs in half.
  3. Place the ribs over indirect heat, and close the lid. Cook for 20 minutes, then brush with barbeque sauce. Cover, and continue cooking for an additional 30 minutes.

  • water (enough to cover ribs in stockpot)
  • 1 pinch kosher salt
  • 2 cups brown sugar
  • 1 cup ketchup
  • ½ cup soy sauce
  • ½ cup oyster sauce
  • ½ cup miso (I like the red miso for this recipe)
  • 2 tbsp white vinegar
  • 3 slices ginger

How to cook:
  1. Parboil Ribs
  2. Wash ribs and remove the white membrane if you prefer. This membrane is the white layer on the rib. Lift the edge of the membrane and pull the coating off the rib meat.
  3. Place the ribs in a stock pot and cover ribs with water. You may cut the rib rack in half to fit them in the pot.
  4. Add slices of ginger and kosher salt to the water and ribs.
  5. Bring water to a boil and then reduce to a low simmer. Simmer the ribs for 25 minutes.
  6. Once cooked, remove ribs and drain water. At this point, you'll want to separate each rib. Slice between the bones with a knife. Then set aside ribs for later.
  7. Make Marinade
  8. Place brown sugar, ketchup, soy sauce, oyster sauce, miso, and vinegar in a medium saucepan and thoroughly mix with a whisk. Heat sauce over medium to low heat until marinade blends and is slightly cooked. Remove from stovetop and save for later.
  9. Marinate Ribs
  10. Once the ribs are parboiled, place them in a large glass pyrex pan. and coat ribs thoroughly with marinade. Cover and refrigerate for 2 to 3 hours.
  11. Bake Ribs
  12. Preheat the oven to 300°. Take ribs out of the refrigerator and bring meat to room temperature. Next, cover the pan with tin foil, and bake for 25 minutes.
