Ingredients:
  • 1.4kg Diced Quince skin with fur on (contains natural pectins) and core removed
  • 700g White Sugar - its half the weight or fruit in total if you are increasing the recipe
  • 1/2 cup water

How to cook:
  1. 1 Place all ingredients in a stove top pot and cook for about 30 mins on a medium to high heat until tender.
  2. 2 Transfer to a blender and blitz (the more you blitz the smoother the paste will be).
  3. 3 Transfer into a slow cooker and place on low with a tea towel under the lid and cook for up to 12 hours stirring every hour or so.
  4. 4 #Please Note: The cooking time will depend on your slow cooker keep an eye on the colour my little slow cooker runs hot so was done in 7 hours.

  • 2 1/2 cups raw sugar
  • 4 quinces, well washed

How to cook:
  1. Turn slow cooker to high and add sugar and water.
  2. Stir to dissolve sugar.

  6. Pour lemon juice over quinces and scatter with lemon zest.
  7. Simmer on low for a least half an hour, or until ready to serve.

Ingredients:
  • 4 medium quinces (about 2 pounds total)
  • 1/4 to 1/2 cup water
  • 2 to 3 cups sugar
  • Accompaniment: cheese and crackers
How to cook:
  1. Preheat oven to 350°F and lightly oil a 1-quart terrine.
  2. Scrub quinces and pat dry. In a small roasting pan bake quinces, covered with foil, in middle of oven until tender, about 2 hours, and transfer pan to a rack. When quinces are cool enough to handle, with a sharp knife peel, quarter, and core them.
  3. In a food processor puree pulp with 1/4 cup water until smooth (if mixture is too thick, add remaining 1/4 cup water a little at a time, as needed). Force puree through a large fine sieve into a liquid cup measure and measure amount of puree. Transfer puree to a 3-quart heavy saucepan and add an equivalent amount of sugar.
  4. Cook quince puree over moderate heat, stirring constantly, until it is thickened and begins to pull away from side of pan, about 25 minutes. Pour puree into terrine, smoothing top with an offset spatula, and cool. Chill puree, loosely covered with plastic wrap, until set, about 4 hours.
  5. Run a thin knife around sides of terrine and invert quince paste onto a platter. (Quince paste keeps, wrapped well in wax paper and then plastic wrap and chilled, 3 months.)
  6. Slice paste and serve with cheese and crackers.
