Berries - Raspberry jam in bread machine recipes

This recipe makes strawberry jam from frozen strawberries. I've written the directions for bread machines that have a jam cycle.

Ingredients:
  • 3 cups of fresh raspberries
  • 3/4 cup granulated sugar
  • 1 Tbsp lemon juice.
  • 1 teaspoon low sugar or no sugar pectin

How to cook:
  1. Gently mash the raspberries with a potato masher or fork.
  2. Add the mashed raspberries to the bread maker with sugar, lemon juice and pectin.
  3. Select the jam setting on the bread machine, (the typical jam setting on a bread machine runs for about 1 hour and 20 minutes)
  4. Once the cycle has ended, use baking mitts to carefully lift the pan out of the bread machine
  5. Pour into jars and let cool before putting on lids and transferring to the fridge.
  6. With oven mitts, very carefully remove the bread pan from the unit (it will be hot!) set on a trivet, and let cool for 45 minutes.
  7. Store in the refrigerator.
Notes: Jellies and Jams Recipes from Your Bread Machine, Pour into bread pan and insert pan into the bread machine. Select “Jam or Jelly” setting. When done, lift the lid of the machine and let cool

  • 2 1/2 cups raspberries
  • 1 3/4 cups sugar
  • 2 ounces liquid pectin

  5. Pour jam into jars, seal tightly and store in the refrigerator.

Homemade jam that you can make quickly in your bread machine. You can use fresh or frozen berries for this recipe.

  • 2 cups Fresh or frozen raspberries ; washed and/or thawed
  • 1/2 cup Organic sugar or dehydrated cane juice
  • 3 tablespoons No/Low sugar pectin
  • 1 teaspoon fresh lemon or lime juice

How to cook:
  1. 1)Mash the raspberries with a potato masher or a ladle until fairly smooth
  2. 2)Sprinkle mixture with a teaspon of lemon or lime juice. Pour mixture into bread machine.
  3. 3)Add the sweetener. You can use white sugar or any organic sugar such as dehydrated cane juice, Turbinado, succinat or beet sugar. You can also use raw Agave nectar, you just need to use less (approximately 1/4 to 1/3 cup versus 1/2 cup of sugar).
  4. ** If you are using regular pectin, you will need to use 1 cup of sugar for each cup of fruit. You can also leave out the sugar if you want, if you are using No/Low Sugar Pectin**
  5. 4) Add 3 tablespoons of No/low sugar pectin. (or 1 box of regular fruit pectin...make sure to adjust sugar amount if using regular pectin)
  6. 5) Use dough cycle to mix ingredients for approximately 5 minutes, then press stop and select "Bake" cycle. Stir occassionaly throughout the 50 minute cycle. Leave the door open the last 25 minutes of the cycle to avoid the mixture bubbling over.
  7. 6.)At the end of the bake cycle, transfer jam into sterilized glass jars, allow to cool for an hour or so, before putting lids on and storing in your fridge for up to 6 weeks. You can also freeze this mixture for up to 4 months.

How to cook:
  1. Defrost the frozen strawberries and squeeze out any excess water.
  2. Place the strawberries, sugar, pectin and butter in the bread machine container
  3. Select and start the "Jam" cycle
  4. Once jam cycle is complete, transfer to a sterilized jar and let it cool. (CAUTION! Container will be very hot!)
  5. Once cooled, store the jam in the refrigerator.
