  • 1/2 cup vegetable oil
  • 1/2 cup brown sugar (, packed)
  • 3 large eggs
  • 3 large bananas (, very ripe, mashed)
  • 1 tablespoon vanilla extract
  • 1/3 cup water
  • 3 cups whole wheat flour
  • 1 1/4 teaspoon baking powder
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 teaspoon ground cinnamon
  • 8 ounces lowfat cream cheese (, softened)
  • 1/4 cup nonfat greek yogurt
  • 1 cup powdered sugar
  • 2 teaspoons vanilla extract

How to cook:
  1. Start off by preheating your oven to 350 degrees F.
  2. Grease a 9x13 baking pan. Add flour as well, and make sure that the entire pan is covered by a thin layer.
  3. Whisk together the oil, brown sugar, eggs, banana, vanilla extract and water until combined.
  4. Sift together the flour, baking powder, baking soda, salt and cinnamon then whisk it gently into the wet ingredients.
  5. Pour into 9x13 baking pan and bake for 35-40 minutes or until the cake springs back when touched.
  6. Once cooled add your cream cheese and yogurt to a stand mixer and cream well, then add in the powdered sugar and vanilla and beat until fluffy.
  7. Spread evenly over the cake.

Ingredients:
  • Cake:
  • 2 cups all white whole wheat flour or all-purpose flour
  • 1/2 teaspoon ground cinnamon
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon kosher salt
  • 3 bananas (ripe)
  • 1/2 cup vanilla or plain greek yogurt
  • 1/3 cup pure maple syrup
  • 1 teaspoon vanilla extract
  • 1 tablespoon coconut oil (melted and slightly cooled)
  • 1 egg (room temperature)
  • Coconut whipped cream:
  • 2 14 ounce cans full fat coconut milk
  • 8 tablespoons honey (agave or maple syrup)
  • 1 teaspoon vanilla extract
How to cook:
  1. Preheat the oven to 350º F. Spray an 8 inch square baking pan with cooking spray and set aside.
  2. In a large bowl, whisk together the flour, cinnamon, baking soda and salt. Set aside.
  3. In a blender, combine the bananas, greek yogurt, maple syrup, vanilla, coconut oil and egg. Blend until smooth, about 1 minute. Pour the blended wet ingredients into the dry ingredients. Whisk well until incorporated.
  4. Pour the cake batter into the prepared pan. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean. Allow to cool completely in the pan..
  5. Once cooled, make the frosting. Chill the cans of coconut milk in the refrigerator overnight or for at least 12 hours to separate the coconut fat and liquid. About one hour before making the frosting, chill a mixing bowl and beaters/paddle attachment in the freezer. Once chilled, open the coconut milk cans and scoop the solid white coconut cream into the bowl. Discard the coconut water or save it for another use. Using a handheld mixer or stand mixer fitted with the paddle attachment, beat the cream until fluffy and smooth, about 3 minutes. Add the sweetener and vanilla and beat until incorporated.
  6. Remove cake from pan and frost cooled cake. Cut and serve.
  7. Store frosted cake in the fridge in an air tight container for up to w week or freeze for up to one month.

  • ⅔ cup shortening (you can replace with butter or margarine, but points change)
  • 1 cup Swerve granulated sweetener
  • 2 eggs
  • 1 cup mashed ripe bananas, usually 2-3 bananas
  • 1 teaspoon vanilla extract
  • 1½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ¼ cup low-fat buttermilk
  • Ingredients for Cream Cheese Frosting
  • 2 SmartPoints per serving when divided by 16
  • 4 ounces light cream cheese, softened
  • ¼ cup butter, softened
  • 2 teaspoons vanilla extract
  • 1 cup Swerve confectioners sweetener
How to cook:
  1. Preheat oven to 325 degrees (dark pan) or 350 degrees (glass pan).
  2. Spray cake pan/casserole with nonstick cooking spray and set aside
  3. With a mixer, cream shortening and Swerve sweetener together until fluffy (approximately 3 minutes).
  4. Add eggs, bananas, and vanilla extract to the mixture and beat well.
  5. In a small bowl, combine the all-purpose flour and baking soda mixing well.
  6. Add flour and buttermilk to the liquid mixture and beat until just combined.
  7. Pour into a prepared cake pan.
  8. Bake for 20-35 minutes depending on pan choice (dark pan for 25-35 minutes, glass pan for 20-30 minutes). Check with a toothpick in the center to see if done completely.
  9. Remove from the oven and allow to cool completely.
  10. If adding cream cheese frosting, follow directions below:
  11. Add cream cheese, butter, and vanilla to a mixer and beat well until smooth. Slowly mix in the Swerve confectioners sugar until combined. Increase the speed and whip until you have a frosting consistency you prefer. Usually 2-3 minutes. You may add a bit of water or more confectioners sugar as needed to get the texture you prefer.
  12. Place icing in a piping bag and pipe in small amounts onto each square of the cake prior to serving.

How to cook:
  1. Preheat the oven to 180C/350F. Grease three 8-inch cake pans and set aside.
  2. In a large mixing bowl, add all your dry ingredients and mix well. Add the remaining ingredients and mix together, until a thick batter remains.
  3. Transfer the cake batter evenly amongst the cake pans. Bake the cakes for 25-27 minutes, or until a skewer comes out mostly clean.
  4. Remove the cakes from the oven and let them cool in the cake pans completely. Once cooled, frost and layer the cakes.
  5. Take the first cake and place it on a flat surface. Spread a generous portion of frosting on top. Place the second cake on top and add more frosting to cover. Top with the final cake, and frost the top and the outside of the cake completely.
