Ingredients:
  • 4 eggs
  • 1 cup sugar
  • ½ cup of white flour
  • 1 large pinch of salt
  • 1 large pinch of baking powder
  • ½ cup softened butter
  • 2 cups milk
  • 1 tablespoon vanilla extract
  • 1 ½ cups dried sweetened coconut flakes

How to cook:
  1. First, turn your oven on and set it to 340°F.
  2. While the oven is heating, it is time to mix your batter. Take a large bowl, add the eggs and sugar, beat until combined and slightly lighter in color. Add the flour, salt, and baking powder and continue to mix until smooth.
  3. Add the butter and milk gradually while mixing continuously. Once you have a smooth batter add the vanilla extract and coconut flakes. Mix well.
  4. Take a 10-inch pie dish and rub with oil, butter or spray with baking spray until well coated. Tip your batter into the pie dish.
  5. Ensure the oven is up to temperature and place your pie dish in the oven. Back for 50-60 minutes until the top is toasted and brown. When you remove the pie, it should be set with no wobble. Try the skewer test to see if it is baked through.
  6. Allow the pie dish to cool for 10 minutes, then turn the pie out onto a wire rack to cool. We like to serve ours slightly warm, but it can be allowed to cool completely.
  7. Cut into wedges and enjoy!

Impossible Coconut Pie
Coconuts are enjoyed by many cultures around the world and are an extremely versatile ingredient. Although great in a savory dish, here is a well-received pie recipe. You may notice that there is no pie crust required. This pie makes it’s own crust!

Ingredients:
  • 4 eggs, beaten
  • 2 cups sugar
  • 2 cups milk
  • 1/2 cup flour
  • pinch salt
  • 1/2 tbsp baking powder
  • 1 stick butter, melted
  • 1 tsp vanilla
  • 1 small can flake coconut
How to cook:
  1. Sift together the flour, salt and baking powder and set aside. Pre-heat oven to 350 degrees.
  2. In a large mixing bowl, beat eggs and sugar. While continuing to mix, gradually add milk.
  3. Add flour and salt and mix until well combined.
  4. Add in melted butter, vanilla and coconut flakes and complete mixing.
  5. Pour mixture into 2 pie tins, lightly greased. Bake at 350 degrees for 30 minutes or until set.

Ingredients:
  • 2 cups whole milk
  • 3/4 cup sugar
  • 1/4 cup biscuit mix, we used bisquick
  • 4 large eggs
  • 1/4 cup (1/2 stick) unsalted butter, room temperature
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon coconut extract
  • 1 1/2 tablespoons amber rum
  • 1/4 teaspoon salt
  • 1 cup shredded coconut, plus extra for garnish, optional
How to cook:
  1. Preheat oven to 350º F and lightly grease a 9-inch pie plate with butter or non-stick spray.
  2. Pour milk, sugar, biscuit mix, eggs and butter into blender or food processor.
  3. Add vanilla and coconut extracts, then rum, if using. Finally, add in salt and coconut.
  4. Cover blender or food processor and pulse for 2-3 minutes, or until everything is puréed and frothy.
  5. Pour into greased pie pan and place in oven.
  6. Bake for 38-42 minutes or until center is just set. Remove from oven and let cool 15 minutes before serving.
