Ingredients:
  • 1 pound Granny Smith apples (400g)
  • 4 eggs at room temperature
  • 1 1/8 cups light brown sugar
  • zest of 1 lemon
  • 1 cup of oil (225 ml)
  • 1 tablespoon honey
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 7/8 cups flour (275g)
  • 1/3 cup raisins (60g)
  • 1/3 cup oatmeal (35g)
How to cook:
  1. Preheat oven to 325° F (160° C). Grease an 8 – 10-inch springform pan and line the bottom with parchment paper.
  2. Peel, core, and finely dice the apples, set aside.
  3. Add the eggs, brown sugar, and lemon zest to a mixer bowl. Beat for about 5 minutes. The eggs will be fluffy and the sugar will have dissolved. Continue beating and slowly add the oil in a very thin stream, add the honey.
  4. In a separate bowl, combine the baking powder, baking soda, salt, cinnamon, and flour. Stir in the raisins to coat them in the flour. Gently fold the flour mixture and the oatmeal into the beaten eggs. Then fold in the diced apples.
  5. Put the batter in the prepared pan. Bake about 90 minutes for an 8-inch springform pan, 60 minutes for a 10-inch springform pan, or until a toothpick inserted in the center comes out clean. Cool for 10 minutes, carefully run a knife around the edge of the pan and remove the springform. Cool completely before slicing.

  • 2 1/3 cups all-purpose flour
  • 2 1/2 teaspoons baking powder
  • 3/4 teaspoon salt
  • 1 cup sugar (divided)
  • 4 ounces butter (room temperature)

  • 4 large apples (peeled, cored, and thinly sliced)

How to cook:
  1. Gather the ingredients.
  2. Lightly coat a 13-by-9-inch pan with cooking spray. Heat the oven to 350 F.
  3. In a large bowl, combine the flour, baking powder, salt, and 3/4 cup of sugar. Add 4 ounces softened butter, milk, and eggs. Beat it with a hand mixer or on a stand mixer at medium speed for 4 minutes.
  4. Pour half of the batter into the prepared pan, then layer on half of the thinly sliced apples. Spoon all but 1/2 cup of the remaining batter over the apples, covering them completely.
  5. Place the remaining apples on top and dot the reserved 1/2 cup batter over the apples.
  6. Cut the remaining 1/4 cup sugar and the cloves into 3 tablespoons cold butter and sprinkle this over the unbaked cake.
  7. Bake about 40 minutes or until a toothpick tests clean. Note that you will be sticking the toothpick through the apple layer, so it can be a bit confusing as to whether you are seeing uncooked batter or apple juices.
  8. Let the cake cool in the pan so the apple juices will be reabsorbed to create a moist cake.
  9. Sprinkle the top of the cake with powdered sugar, if desired, and cut it into 12 squares.
  10. Serve the apple cake and enjoy!

  • 3.3 pounds apples (unpeeled weight, Braeburn, Granny Smith, see the post for more detail)
  • 2½ tablespoons sugar
  • 1½ teaspoons cinnamon
  • 3 tablespoons lemon juice
  • 3 cups+2tbsp all-purpose/plain flour ((14.11 oz))
  • 1 teaspoon baking powder
  • ¼ teaspoon fine sea salt
  • ½ cup sugar (plus 2½ tablespoons for the egg whites layer)

How to cook:
  1. Start by preparing the apples. Core, peel and cube the apples and place in a large pot along with the lemon juice, cinnamon and 2.5 tablespoons of sugar. Stir thoroughly, cover and cook the apples over a medium heat for about 10 minutes or until they have released their juices and softened. Stir the mixture gently occasionally.Remove the lid and continue cooking for 3-4 more minutes stirring gently. Remove from the heat and set aside to cool completely stirring once in a while (the apples will absorb excess moisture as they cool).
  2. While your apples are cooling prepare the dough. Place the flour, baking powder, salt, sugar, 4 egg yolks, butter, vanilla extract and yogurt in a food processor. Pulse until the ingredients come together in a dough.
  3. Place the dough on top of a flat surface and form a log. Cut it into 2 parts (2/3 and 1/3). Place both on a plate/cutting board and freeze for 30 minutes.After about 20 minutes preheat the oven to 375 F/ 190 C/ gas mark 5. Lightly grease a 23/33 cm (9/13'’) pan and dust with flour (or line with parchment) and set aside.
  4. Remove the dough from the freezer (place the smaller piece in the fridge for now). Cut the larger dough into thin slices (approx. 5mm thick) and arrange in a single layer in the bottom of the baking pan. If you don’t have enough slices you can cut a little off the smaller dough and use that.
  5. Press down with your knuckles to spread the dough evenly over the bottom of the pan. Place the pan in the fridge while you prepare the egg whites.
  6. Beat the egg whites with a pinch of salt until soft peaks appear then gradually add 2.5 tablespoons of sugar beating all the time until the mixture is thick and firm. Set aside.
  7. Remove the pan as well as the remaining dough from the fridge. Spread the apple filling (it should be completely cooled by now) over the layer of dough and even out without pressing down too much.
  8. Spread the egg white mixture over the top.
  9. Coarsely grate the remaining dough over the whole thing without pressing down.
  10. Bake in the centre of the oven for 40 minutes then cover loosely, if necessary (to prevent the top becoming too dark) and continue baking for another 25 minutes (to ensure the bottom of the cake is fully cooked).
  11. Remove from the oven and set aside to cool before cutting. Dust your apple cake with a little icing/powdered sugar before serving.

How to cook:
  1. Peel the apples.
  2. Oil the 9x13" baking tray or put the parchment paper inside.
  3. Preheat the oven to 392°F / 200°C.
  4. Mix all the ingredients for the dough together.
  5. Place ¾ of the dough in the baking tray.
  6. Grate the apples, then squeeze out the excess juice.
  7. Mix the grated apples with potato starch and cinnamon.
  8. Whip the egg whites with a bit of salt and sugar.
  9. Mix the apples with ½ of the egg whites.
  10. Put the apples onto the dough.
  11. Cover them with the second half of whipped egg whites.
  12. Finally, cover the cake with the remaining ¼ of the dough. You can either roll it out or grate it.
  13. Bake for 60 minutes.
