Grahamothers Graham Cracker Bars

This classic recipe comes from our Homemade Good News cookbook series. A graham cracker crust with a buttery coconut and walnut center and vanilla icing topping. These bars have been a favorite for generations.

Ingredients:
- 3/4 cup (1 1/2 sticks) butter, melted
- 1 cup Dixie Crystals Extra Fine Granulated Sugar
- 1 egg
- 1/2 cup evaporated milk
- 1 cup walnuts nuts, chopped
- 1 cup shredded coconut
- 1 cup graham cracker crumbs
- Icing
- 2 cups Dixie Crystals Confectioners Powdered Sugar
- 3 tablespoons evaporated milk
- 1 teaspoon vanilla extract
- 1/4 cup (1/2 stick) butter, melted
How to cook:

- Line 9 x 13-inch pan with whole graham crackers, set aside. In a sauce pan melt better and add sugar. Beat egg and milk together then add it to butter. Bring to a boil stirring constantly over low heat. (If you get any cooked egg whites, strain from mixture.) When mixture boils add nuts, coconut and graham cracker crumbs, stir to blend all ingredients. Pour over crackers in pan and put a layer of whole graham crackers on top. Pour icing over the top. Icing: Mix all ingredients together and beat until smooth. Pour over top of cookie and chill. Cut into squares.

- 1 cup butter (melted)
- 1 cup sugar
- ½ cup milk

- Line a 9 x 13 inch pan with whole graham crackers. Break some apart so that the whole bottom of the pan is covered. You can piece them in along the edges.(about 8 whole graham crackers)
- In a medium sized pan combine butter, sugar, milk, and beaten egg. Cook stirring constantly until it boils. Remove from heat and add coconut, chopped nuts and graham cracker crumbs.
- Spread over crackers in the pan and then immediately place more whole graham crackers on top covering the coconut mixture.
- Let cool slightly.
- Make the frosting by combining the butter, cream, powdered sugar, vanilla, and almond. Mix until well blended. If it's too runny add a little more powdered sugar.
- Spread over the top graham cracker layer.
- Refrigerate for about 20 - 24 hours. This will soften up the graham crackers. Then cut into bars.

- GRAHAM CRACKER BASE
- Line a 9x13 inch pan with cinnamon graham crackers.
- In medium saucepan, combine the melted butter, sugar, egg and milk. Cook over medium-high heat, whisking constantly, until it reaches custard consistency (thickened). Remove from heat and cool (about 15 minutes).
- Add the crumbs, pecans and toffee bits. Spread the mixture over the graham crackers. Top with another layer of cinnamon graham crackers.
- FROSTING
- Combine the frosting ingredients, adding a little milk at a time until it reaches frosting consistency. Frost the top of the graham crackers and sprinkle with chopped pecans.
- Cover and refrigerate overnight. Cut into small squares or bite-sized pieces.

- Preheat an oven to 350 degrees F (175 degrees C).
- Melt the butter in a saucepan; remove from heat and stir in the sugar and graham cracker crumbs. Spread the mixture into the bottom of a 9x13-inch baking dish. Bake in the preheated oven until slightly firm, about 10 minutes.
- Stir the coconut and condensed milk together in a bowl; spread over the baked crust and return to oven for 12 minutes more. Set aside to cool at least 10 minutes.
