This is a gooey and chocolaty dream. It's very moist. It's a great dessert for potlucks, dinner parties, etc. Make sure you get a piece though because it will disappear quickly! I got the recipe from the Southern Living 30 Years of our best cooking book. It's a great cook book!

  • 1 cup butter
  • 1/2 cup cocoa
  • 2 cups sugar
  • 4 large eggs, slightly beaten
  • 1 1/2 cups all-purpose flour
  • 1 dash salt
  • 1 teaspoon vanilla extract
  • 1 1/2 cups pecans (optional)
  • 4 cups mini marshmallows
  • 1 (16 ounce) package powdered sugar, sifted
  • 1/2 cup milk
  • 1/3 cup cocoa
  • 1/4 cup softened butter
  • Calories: 487.2 calories
  • Fat: 17.5 grams

How to cook:
  1. Preheat oven to 350°F.
  2. Lightly grease a 9x13 inch pan.
  3. Melt the butter in a medium saucepan.
  4. Add the cocoa and stir.
  5. Remove from the heat.
  6. Pour butter mixture into a mixing bowl and add sugar and eggs.
  7. Mix until blended.
  8. Add the vanilla.
  9. Mix in the flour and salt.
  10. Stir in the pecans.
  11. Put batter into prepared pan and cook for 35 minutes or until done.
  12. Remove from oven and sprinkle with marshmallows.
  13. Cool in the pan on a wire rack.
  14. For the frosting: Combine all of the ingredients and mix until smooth. Spread frosting on cooled cake.
  15. If your frosting is too thick, add more milk.

  • 2 cups sugar
  • ½ cup unsweetened cocoa powder
  • 1 cups 2 sticks salted butter (room temperature)
  • 2 teaspoons vanilla extract
  • 4 large eggs
  • 1 ½ cups self-rising flour
  • 1 cup chopped pecans
  • 1 cup shredded coconut
  • 7 ounces marshmallow creme
  • ½ cup salted butter (room temperature)
  • ⅓ cup unsweetened cocoa powder
  • 3 ½ cups powdered sugar (about 1 pound)
  • 1/3 cup milk
How to cook:
  1. Make the cake:
  2. Spray a 9x13 baking pan with cooking spray. Preheat the oven to 350º Fahrenheit.
  3. In a large bowl, mix sugar, cocoa and butter together until smooth.
  4. Add the vanilla and eggs and mix well.
  5. Add flour, nuts and coconut. Mix again, scraping the sides of the bowl as needed.
  6. Pour the batter in the prepared pan. Bake for 35-40 minutes or until the center of the cake springs back when you touch it.
  7. Spread the marshmallow cream over the cake while the cake is still hot.
  8. Let the cake cool for 20 minutes while you prepare the frosting.
  9. Make the frosting:
  10. Cream the butter until it is smooth and almost white in appearance.
  11. Add the cocoa powder and half of the powdered sugar. Mix well.
  12. Mix in the milk, then mix in the remaining powdered sugar.
  13. If you need more milk to make the frosting spreadable, add it a tablespoon at a time.
  14. Frost the cake.

  • 1 cup Pecans, chopped
  • 1/2 cup Cocoa
  • 4 Eggs, beaten
  • 2 cups Sugar
  • 1-1/2 cups Self-Rising Flour
  • Marshmallow Crème 7oz.
  • 1/4 cup Butter, softened
  • 1/2 cup Cocoa
  • 1 box Confectioners’ Sugar
  • 1/2 can Evaporated Milk (12oz-can)
  • 1 tsp Vanilla
How to cook:
  1. Place cocoa and sugar in a large mixing bowl.
  2. Stir on low speed to mix well.
  3. Add the beaten eggs. Mix well.
  4. Add the butter. Mix well.
  5. Gradually add the flour, mixing well.
  6. Fold in the pecans.
  7. Lightly butter the inside of your 9×13 baking dish.
  8. Pour the batter into the dish, spread evenly.
  9. Bake at 350F degrees for about 30 minutes or until done.
  10. Remove from oven. Place on wire rack to cool completely.
  11. Spread top of cooled cake with the marshmallow crème.
  12. Place butter and cocoa in a large mixing bowl.
  13. Add confectioners sugar.
  14. Add the vanilla flavoring
  15. Gradually add milk as needed.
  16. Mix well until creamy and spreadable.
  17. Spread icing over the top of the cake.
