Lacking the ingredients for a proper Alfredo ( and concerned about the fat load in regular Alfredo) I scrounged around my cupboards and refrigerator and used what I had. I made this when I had some left over garlic shrimp and wanted to do a shrimp alfredo over whole wheat pasta.

  • 1 (12 ounce) can evaporated skim milk
  • 2 tablespoons grated nonfat parmesan cheese
  • 3 tablespoons butter-flavored sprinkles
  • 1/4 teaspoon white pepper
  • 6 tablespoons grated nonfat parmesan cheese
  • 1/4 cup sliced scallion (garnish)
  • 2 tablespoons chopped fresh parsley (garnish)

How to cook:
  1. In a saucepan, combine the evaporated skimmed milk, 2 tablespoons grated nonfat Parmesan cheese, 3 teaspoons butter-flavored sprinkles and 1/4 teaspoon ground white pepper.
  2. Stir well. Cook on med-low til sauce is heated through.
  3. Gently stir in 10 oz of cooked, drained fettuccine pasta.
  4. (Add a little more milk if it seems too dry.) Remove pot from heat and add the remaining 6 tablespoons grated nonfat Parmesan and toss.
  5. Garnish with scallions and parsley.
  6. Serve immediately.

  • 1 tablespoon light margarine
  • 2 garlic cloves, minced
  • 1 tablespoon flour
  • 1 1/3 cups skim milk
  • 2 tablespoons fat free cream cheese
  • 1 cup parmesan cheese, grated

How to cook:
  1. Melt Margarine over medium heat, add garlic and saute for 1 minute.
  2. Stir in Flour.
  3. Slowly add Milk and stir with wisk until blended.

  5. Stir in Cream Cheese and stir constantly for about 2 minutes.
  6. Add Parmesan Cheese and stir melted.
  7. Pour over your favorite pasta and enjoy.
Notes: Lower Fat Creamy Alfredo Sauce/White Sauce Recipe, Mix in cream cheese spread, 4 tablespoons Parmesan cheese and pinch nutmeg until smooth, bring to a simmer and cook about 3 minutes whisking/mixing continuously

I made this when I had some left over garlic shrimp and wanted to do a shrimp alfredo over whole wheat pasta. Lacking the ingredients for a proper Alfredo ( and concerned about the fat load in regular Alfredo) I scrounged around my cupboards and refrigerator and used what I had. The result was wonderful! The roux adds the thickening missing by not using heavy cream and the buttermilk adds a delicious and fat-free tang. Unless you slop it on your pasta with a shovel, this comes out to about 95 calories per serving versus 400-500 for traditional Alfredo - what a difference!

How to cook:
  1. Melt butter until foaming. Stir in flour and continue stirring for 1-2 minutes until golden in color.

  3. Disgard garlic. stir in Parmesan and Romano. Stir until cheeses are incorporated.
  4. At this point you may remove from heat while you cook the pasta or continue with the recipe.
  5. Whisk the sauce until smooth and of desired consistancy. Adjust seasonings and add any other elements ( shrimp,chicken, scallions, broccoli etc) that you desire.
  6. NOTE: If adding heavily seasoned elements such as garlic shrimp be sure to make the sauce without the garlic, salt and pepper until you have finished the sauce. Then adjust the flavors at that point.

This is a very creamy sauce. As its name implies it is very easy...I love to do it with cooked shrimp and what ever fresh veggies I have and put it over noodles. You can use any meat you like. I cook the meat in a separate pan and pour the Alfredo sauce over when cooked. YUMMY!

How to cook:
  1. Melt butter over low heat (do not burn or sauce will take on nutty flavor).
  2. With a whisk, mix in the cream cheese and whisk until completely combined. (At first it will seem like it won't combine, but keep stirring until it does).
  3. Add milk and flour and continue to whisk.
  4. Once it heats up and is smooth add parmesan cheese and salt and pepper and stir to combine.
  5. Let it sit for a few minute to thicken.
  6. Lower fat recipe. Follow directions above--it will be slightly thinner, but will thicken upon standing.
