This is a great recipe to use all that zucchini from your garden, cheesy and delicious!

  • 1 ½ cups water
  • ½ cup uncooked white rice
  • 2 pounds zucchini
  • ¼ cup butter
  • ¼ cup vegetable oil
  • ½ cup grated Parmesan cheese
  • ½ cup shredded Cheddar cheese
  • salt and pepper to taste
  • 2 eggs, beaten
  • 1 cup bread crumbs
  • 2 tablespoons butter, melted

How to cook:
  1. Bring water to boil, add rice. When water returns to a boil, reduce temperature to a low. Cover rice and cook until rice is tender.
  2. Preheat oven's broiler. Grease a 9x13 inch baking dish.
  3. Cut ends from zucchini and steam until tender. Reserve 2 zucchini for garnish, then dice remaining zucchini.
  4. Combine butter and oil in a Dutch oven and heat until butter is melted. Add rice and diced zucchini, then saute until golden, stirring frequently. Stir in the cheeses until melted and add salt and pepper to taste. Let cool slightly, then stir in eggs quickly. Pour into a prepared baking dish and sprinkle generously with bread crumbs.
  5. Slice reserved zucchini and arrange around the diced mixture. Drizzle melted butter over top.
  6. Broil about 6 inches from the source of heat until lightly browned and bubbly.

  • 3 cups sliced zucchini
  • 3 tablespoons margarine, butter or spread with no trans fat
  • 1 (7.2-ounce) package RICE-A-RONI® Herb & Butter
  • 1 cup shredded cheddar cheese (4 ounces)
  • 3/4 cup grated Parmesan cheese
  • 4 eggs, beaten
  • 1/4 teaspoon ground black pepper
How to cook:
  1. Heat oven to 350° F. In large skillet, over medium-high heat, saute zucchini in 1 tablespoon margarine 3 minutes or until tender crisp. Remove from skillet; set aside. In same skillet, prepare RICE-A-RONI as package directs using remaining 2 tablespoons margarine. In large bowl, combine prepared RICE-A-RONI, zucchini, cheeses, eggs and pepper. Spoon evenly into lightly greased 2-quart casserole dish. Bake for 25 minutes or until knife inserted 1-inch from center comes out clean.

  • Rice, 300 g
  • medium zucchini, 3
  • Cheese, 200 g
  • Vegetable broth,
  • ham slices, 120 g
  • White onion, 1/2
  • Extra virgin olive oil,
  • Breadcrumbs,
  • Fine salt,
How to cook:
  1. Pour a drizzle of extra virgin olive oil into a saucepan and add the chopped onion and thinly sliced ​​zucchini, keeping about a tablespoon aside.
  2. Cook the zucchini over high heat for a few minutes.
  3. Pour the rice and let it toast over medium heat for a few moments.
  4. Cover with hot vegetable broth and season with salt.
  5. Bring the rice to cook, stirring constantly and adding more hot broth as it is absorbed.
  6. Once the rice is cooked, turn off the heat.
  7. Add the cooked ham, coarsely chopped, and the scamorza cheese into small pieces. Set aside a little.
