Ingredients:
- ¼ cup pure honey
- ¾ cup creamy natural drippy peanut butter
- 2 tablespoons + 1 teaspoon coconut oil
- 2 ½ cups crispy rice cereal (I used brown rice crisps from Whole Foods)
- ⅓ cup dark chocolate chips
How to cook:
- Add honey, peanut butter and 2 tablespoons of coconut oil to a saucepan. Cook for 1-2 minutes on medium-low heat just until the mixture has melted and combined. Use a wooden spoon to stir the mixture as it melts.
- Remove from the heat, add cereal and combine.
- Press the mixture into an 8x8 baking pan lined with parchment paper.
- Place chocolate chips and 1 teaspoon of coconut oil into an oven safe bowl. Microwave in 30 second increments to ensure the chocolate does not burn. (Example: Microwave for 30 seconds, stir the chocolate and then place back into the microwave.) Repeat this until the chocolate is completely melted.
- Drizzle the melted chocolate over the mixture in the pan.
- Place the pan into the freezer for about one hour.
- Slice into bars and enjoy!
- Store the cut bars in an airtight container, in the fridge, for about 4 days.

- Line a 9x13 rectangular dish or two 8x8 baking pans with parchment paper. Allow paper to overhang the edges for easy removal.
- Cook
- In a large soup or stock pot combine the nut/seed butter, brown rice syrup, and vanilla. Stirring frequently, cook over medium-low heat until warm and smooth, about 2 or 3 minutes.
- Mix
- Remove from heat, and stir in 7 cups of the cereal. Continue mixing until the cereal is fully incorporated. If the mixture seems too wet and sticky, add another ½ cup cereal.
- Shape
- Transfer the mixture to the lined pan(s) and press down evenly. A flat object like a spatula makes this easy. Use a small piece of parchment paper underneath the spatula to prevent sticking.
- Chill
- Refrigerate the rice krispies uncovered until firm and cool, about 30 minutes. Then lift out onto a cutting board, and cut into squares. Serve now or store in an airtight container in the refrigerator for up to one week.

- LIne an 8×8 baking pan with parchment paper, or spray it with spray oil, and set it aside.
- Place the rice crisps in a large mixing bowl, and set them aside.
- Whisk together the creamy nut butter, agave or maple syrup, and sea salt in a small saucepan.
- Bring the ingredients to a quick bubble/boil. Reduce the heat to medium-low and simmer for 3 minutes, stirring frequently often to prevent burn. The nut butter and syrup mixture will begin to resemble a thick texture and appearance similar to caramel sauce.
- Remove the saucepan from the heat, and mix in the vanilla. Then, quickly combine the mixture with the rice crispies in the mixing bowl. Stir quickly to combine!
- Once mixed, press batter into the prepared baking pan and gently press it down using a spatula or hands.
- Chill the pan in the fridge for 30-45 minutes before slicing and decorating the rice krispie treats.
- To Decorate:
- Melt the chocolate or white chocolate in a double boiler or in 30-second increments in the microwave, stirring often.
- Spread the melted chocolate on top of the set rice krispies pan, and let the chocolate cool before slicing.
