- 1/4 cup cooked brown rice
- 1/4 cup milk
- 1 tablespoon cream
- 1/4 teaspoon cinnamon
- 1 tablespoon cornstarch
- 1 -2 tablespoon honey, to taste

- Combine rice, milk and cream in a microwave bowl and stir.
- Spoon a few tablespoons of the liquid out and stir in cornstarch in a small bowl until no lumps are present. Add the cornstarch mixture and stir.
- Microwave on medium high for about 3 minutes, or until desired thickness is reached. Add cinnamon and honey and serve warm.

Ingredients:
- 7 litres/12½ pints whole milk
- 1kg/2lb 4oz pudding rice
- 500g/1lb 2oz caster sugar
- 4 bay leaves
- 6 pinches freshly ground nutmeg
- 3 tsp vanilla essence
- 500g/1lb 2oz strawberry or raspberry jam, to serve
How to cook:
- Preheat the oven to 160C/140C Fan/Gas 2.
- Stir all of the ingredients, except the jam, together in a large bowl. pour the mixture into the baking dishes.
- Cover the dishes with a lid or sheet of aluminium foil and cook in the oven for 1½ hours. Remove the lid or foil and cook for a further 20 minutes, or until the rice is tender and the top is lightly golden and has formed a skin.
- Spoon the rice pudding into serving bowls and serve with spoonfuls of jam.

Ingredients:
- 3/4 cup medium-grain white rice (sometimes known as Arborio rice)
- 1½ cups whole milk
- 1/3 cup granulated white sugar
- 1/4 teaspoon salt
- 1 large egg (lightly beaten)
- 2 teaspoons vanilla bean paste (or substitute with vanilla extract)
- 3/4 cup raisins
- 3 Tablespoons butter
- 1/2 cup sweetened condensed milk
- 1 teaspoon ground cinnamon
- Pinch nutmeg
How to cook:
- Add 1 & 1/2 cups of water to a large saucepan and bring to a boil over medium-high heat. Stir in the rice, reduce the heat to low, cover and simmer for 15-20 minutes until rice is fluffy, tender and cooked and water has evaporated.
- To the same pot with the rice, add in the whole milk, sugar, and salt. Cook and stir over medium heat until thick and creamy, about 10-15 minutes. Working quickly and carefully, whisk in the beaten egg, vanilla bean paste and raisins and stir vigorously until egg is incorporated and mixture is smooth. Cook for 2-3 minutes longer. Lastly, add in the butter, condensed milk, and spices, stirring until combined, and cook for another 1-2 minutes more. Serve!
