  • 2 cups pistachios (raw, shelled)
  • 1 tbsp olive oil (or olive oil spray)
  • 1 tsp salt
  • 1 tsp chili powder
  • 1 tsp brown sugar
  • ½ tsp cayenne pepper
  • ½ tsp garlic powder
  • ½ tsp salt
  • 1 tbsp butter (omit the olive oil for this flavor)
  • 1 tbsp honey
  • ½ tsp salt
  • 2 tbsp brown sugar
  • 1 tsp curry powder
  • ¼ tsp cayenne pepper
  • ½ tsp cumin
  • ½ tsp salt
  • 1 tsp dried rosemary
  • ½ tsp salt

How to cook:
  1. Preheat Oven
  2. Preheat oven to 375°F.
  3. Spread Nuts
  4. Spread the pistachios on a baking sheet in a single layer.
  5. Honey Only
  6. For Honey Roasted Pistachios only: Melt the butter in the microwave in a small, microwave safe bowl. Stir in the honey. Drizzle over the pistachios and toss to coat.
  7. All Flavors
  8. For all other Flavors: Drizzle the pistachios with the olive oil and seasonings—for your flavor of choice!
  9. Roast Nuts
  10. Roast 10–12 minutes, tossing occasionally, until toasted to your liking.
  11. Store Nuts
  12. If storing the nuts for later, spread them on a sheet of parchment paper. Allow them to dry and cool for at least one hour. Make sure they are completely dry, and then store in an airtight container for 3–5 days.

Spicy pistachios make a great snack for movie night or while watching sports!

Ingredients:
  • 3 tablespoons butter, melted
  • 1/4 cup Worcestershire sauce
  • 1 teaspoon ground chipotle chile pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ground cinnamon
  • 4 cups shelled dry-roasted pistachios (about 8 cups unshelled)
How to cook:
  1. In large mixing bowl, stir together first 5 ingredients, add pistachios, tossing to coat. Arrange pistachios in a single layer on a lightly greased cookie sheet.
  2. Bake at 350 degrees for about 20-25 minutes, stirring after 10 minutes. Let cool. Store in an airtight container.

Recipe: Curry-Roasted Pistachios
In the past few years, pistachios have inched their way towards the top of my “favorite snacks” list. This is mostly due to their unique flavor paired with the “fun” aspect of cracking the nut easily out of the shell. These spicy curry pistachios have recently become my evening go-to snack with a glass of crisp white wine.   • 1 tablespoon brown rice syrup
  • 1 tablespoon coconut oil
  • 1 tablespoon lime juice
  • 1 tablespoon unsalted, mild curry powder blend
  • 1/2 teaspoon sea salt
  • 1/8 teaspoon cayenne pepper
  • Zest from 1 lime
  • 1 1/2 cups raw pistachio meat or raw pistachios in the shell (See Recipe Note)
  • 1 tablespoon cane sugar

How to cook:
  1. Step 1
  2. Preheat the oven to 300°F. Combine the brown rice syrup, coconut oil, lime juice, curry powder, sea salt, cayenne, and lime zest in a small sauce pan. Warm over low heat, stirring frequently, until the coconut oil has melted and everything is well combined.
  3. Step 2
  4. Place the pistachios in a bowl and pour the hot curry seasoning over nuts. Toss with a spatula or spoon until the nuts are fully coated. Spread the seasoned nuts onto a parchment-lined baking tray. Roast the nuts for about 25 minutes, stirring once at halfway mark, until the coating looks baked on and dry.

  6. Remove nuts from oven and sprinkle with cane sugar. Let them cool completely then break apart and transfer to an airtight container.

How to cook:
  1. Soak pistachios
  2. Soak the pistachios in water for 4-24 hours. Refrigerate while soaking.
  3. Blend
  4. Drain the pistachios and rinse them well. Add them to a blender or food processor with all the remaining ingredients. Blend on high until smooth, 2-3 minutes. Note: if you do not have a high-powered blender you may want to strain the cream through a fine mesh sieve if there is any gritty texture.
  5. Chill
  6. Pour the pistachio cream into a bowl and refrigerate it until it's completely cold. Once the cream is cold process it in your ice cream maker.
  7. Freeze
  8. Scoop the pistachio ice cream out of your ice cream maker and into a freezer-proof container. Cover the top with parchment paper directly on the surface and freeze until firm.
