This flavorful Jamaican seasoned rice is easy to prepare with long grain brown rice, callaloo, ackee, cabbage, pumpkin, carrot, peas, carrot in a seasoned coconut broth. This seven-step recipe for Caribbean fried salt fish isn't deep-fried but sautéed and often served with rice, roti, or ground provisions.

Ingredients:
  • 1/2 lb. Salt Fish
  • 1 1/2 cup Ackee
  • 2 strips Bacon (or 1 pigstail) (cut up)
  • 1/2 cup Plummy Tomatoes (diced)
  • 2 Tbsp. Garlic (minced)
  • 1/4 cup Onion (minced)
  • 1/4 cup Green Sweet Bell Pepper (minced or diced)
  • 1 Tbsp. Fresh Thyme leaves
  • 1 tsp. Scotch Bonnet Pepper (minced (or more to taste))
  • 1 pack Coconut Milk (powder)
  • 1/4 tsp. Black Pepper
  • 2 cups Rice (or parboiled for best results)
  • 2 cup Water
  • 2 Tbsp. Butter
  • 1 stalk Scallion
How to cook:
  1. Wash excess salt off salt fish and soak for 45 minutes. Then place a fresh pot of water with salt fish to boil on high heat for 15 minutes. Remove from heat and rinse in cold water. Clean up salt fish by removing any skin and bones. Pick into medium- small pieces and set aside.
  2. Mince garlic, onion, green pepper and scotch bonnet together, set aside. Add the fresh thyme to this.
  3. Dice plummy tomatoes and set aside.
  4. Cut up scallion fine and set aside.
  5. Mix coconut milk powder with water to equal 2 cups. If using liquid coconut milk, add enough water to this to equal 2 cups.
  6. Wash rice and drain, set aside.
  7. Measure out 1- 1/2 cups of pre-boiled fresh ackees. If using can ackee, drain and set aside.
  8. Cut up 2 strips of bacon in small pieces and fry for just a few minutes until mostly cooked (not crispy). ** If using pigstail, boil for 15 minutes, change water and boil another 10-15 minutes. Cut at joints and set aside.
  9. Using a medium pot or a large skillet with a cover, on medium heat place 2 Tbsp. of butter to melt. Add the minced garlic, onions, green pepper, scotch bonnet, and thyme. Sautee for 1 minute. Add salt fish and sautee another minute or 2. Turn heat to high and add the coconut milk water, the bacon or pigstail, black pepper, most of the plummy and most of the scallion (leaving back a little of each for garnishing).
  10. Add the rice, stir to mix evenly. Turn heat to medium-high and bring to a boil. Once boiling, cover pot and turn to low heat to simmer for about 10 minutes or until most of the water is evaporated. Use a fork and gently stir rice. Place a piece of saran cling wrap over pot and cover. Continue cooking another 10 minutes then uncover and stir a little, Place ackees on top and cover again with saran and pot cover, continue to steam another 10 minutes (if using can ackee, don't add to rice until the last 5 minutes of cooking as it may be softer).
  11. Uncover and gently stir from the bottom up to incorporate ackee but carefully so it dosen't mash out. Make sure the rice is cooked to desired taste, if not cover and cook another few minutes.
  12. If easier, place in a casserole dish to stir gently and stir. Garnish top with the remainding tomatoes, scallion, and a whole scotch bonnet pepper in center. Serve and enjoy.

  • 2 cup parboiled rice
  • 1 lb salt fish (salted cod)
  • 1 cup of water
  • 1 cup of coconut milk (make your own)
  • 4 cloves garlic, chopped or 2 tablespoons minced garlic
  • 4 flavor peppers, chopped or 2 tablespoons Bertie's pimento sauce
  • 2 tablespoons chopped chive
  • 2 stalks celery, chopped
  • 1 cup cut-up okra (I use the frozen okra from Goya)

  • 2 tablespoons coconut oil
  • 1 medium onion finely chopped

How to cook:
  1. Heat oil in a large pot on medium-high heat. Add onion, garlic, green onions, red bell pepper, thyme, and allspice. Cook stirring constantly until onion is soft, about 3 minutes.
  2. Add tomatoes, carrot, pumpkin, cabbage, callaloo, brown rice and stir.
  3. Add coconut milk, vegetable broth, and top with Scotch bonnet pepper. If using vegetable broth instead of vegan bouillon then you want to season with salt to taste now. It should actually have enough salt that when you taste it, it should taste how you want the finished rice to taste because the rice will absorb some of the flavors as it swells.
  4. Cover pot and bring to a boil, reduce heat to simmer for 45 minutes.
  5. Gently stir in sweet corn, green peas, ackee, cover the pot and cook for 5-10 minutes or until rice is tender.
  6. Fluff with a fork, add additional cooked vegan protein and serve.
