Ingredients:
  • 4 boneless pork chops
  • 1/2 cup Gold Medal™ all-purpose flour
  • 1 teaspoon salt
  • 2 large eggs, beaten
  • 3/4 cup Progresso™ plain bread crumbs
  • 5 ounces button mushrooms, sliced
  • 3 tablespoons butter
  • 3 tablespoons Gold Medal™ all-purpose flour
  • 1 can (14.5 oz) beef broth
  • Salt and freshly ground black pepper

How to cook:
  1. Place the pork chops between two sheets of plastic wrap and pound them with the flat side of a meat tenderizer until they're 1/4 inch thick. Sprinkle lightly with salt and freshly ground black pepper. Set aside.
  2. If using fresh mushrooms, heat a teaspoon or so of olive oil in a small skillet over medium-high heat and add the mushrooms. Cook until the mushrooms have released their juices and the liquid is mostly evaporated. Transfer the mushrooms to a plate and set aside.
  3. In the same skillet, melt the butter, add the flour, and whisk until the flour is dissolved. Continue to whisk constantly until the mixture is a rich, deep golden brown, about 3-4 minutes.
  4. Slowly add the beef broth, whisking constantly, until combined. Return the mushrooms to the skillet. If using canned mushrooms, you'll add them at this point. Bring the gravy to a simmer, reduce to low, and simmer uncovered for about 15 minutes or until the gravy is thickened. Season with salt and pepper.
  5. While the gravy is simmering let's get back to the Schnitzel. Working quickly, dip the chops in the flour, the egg, and the breadcrumbs. Don't press the breadcrumbs into the meat. Coat gently but thoroughly, and gently shake off the excess crumbs. Make sure the cooking oil is hot enough at this point (about 280°F) as you don't want the Schnitzel to sit around in the coating for long before frying.
  6. Fry the Schnitzel for about 2-3 minutes on both sides. When they're a deep golden brown, transfer them to a plate that's lined with paper towels. Serve immediately with the mushroom gravy and your choice of sides.

Ingredients:
  • 4 medium lean pork chops
  • - salt to taste
  • - pepper to taste
  • - paprika to taste
  • - flour for dredging
  • - beaten eggs for dipping
  • - breadcrumbs for coating
  • - oil or shortening for frying.
How to cook:
  1. Prepare the meat by trimming off the fat. Flatten or pound it, without tearing, to a uniform 1/4 inch thickness. Season with a mixture of salt, pepper and paprika.
  2. For the next steps, you should handle the meat with a fork or you will have a mess on your fingers. Dredge the meat in flour until well coated. Lightly beat the eggs in a bowl. Dip the chops into the eggs and cover them with breadcrumbs.
  3. Leave the breaded meat rest on a cookie sheet or on a wire rack for a while (15 minutes) to give the breading a chance to adhere better.
  4. Preheat your oven to 225 degrees.
  5. Heat the fat in a large skillet. Cook the Schnitzel on both sides until they are nicely browned. When all of them are finished put them into the pre-heated oven for about 1/2 hour. NOTE: This last important step allows the seasonings to be absorbed by the meat.

How to cook:
  1. Place flour in a shallow dish, eggs in a second shallow dish, and Panko breadcrumbs in a third shallow dish.
  2. Season the pork with salt and pepper on both sides.
  3. Working with one piece of pork at a time, dredge the meat in the flour, shaking off any excess. Dip in the eggs, shaking again to remove any excess egg. Finally, coat in breadcrumbs. Repeat with remaining pork.
  4. Heat oil in a skillet over medium-high heat. Working in batches so that you don’t overcrowd the pan, fry the breaded pork in the skillet until browned and no longer pink, about 3 minutes per side. If the breading is browning too quickly, or if the skillet starts to smoke, reduce the heat. Remove browned pork to a paper towel-lined plate. While it’s still warm, season the pork with additional salt and pepper, to taste.
  5. Wipe out the skillet. Melt butter in the pan over medium heat. Add the mushrooms to the pan and cook until soft, about 5-7 minutes.
  6. In a small bowl, whisk together the gravy mix, cold water and wine. Add the gravy mixture to the skillet with the mushrooms; bring to a boil over medium heat. Reduce the heat and cook, stirring constantly, for one more minute. Remove from the heat; whisk in the sour cream.
  7. Serve the pork with mushroom gravy, fresh parsley and lemon wedges.

Number of ingredients: 8
Ingredients:
  • 4 bone-in center-cut pork loin chops ((about 1/2 inch thick, 4-5 ounces/115-145g each))
  • 1/2 cup flour
  • 2 large eggs ((beaten))
  • 2 1/2 cups unseasoned dried breadcrumbs ((if making from scratch, they should be ground very finely, and be completely dried))
  • 2 lemons ((for marinating and for serving))
  • 1 teaspoon salt
  • 1/2 cup frying oil
  • 6 tablespoons butter

How to cook:
  1. First, trim the little bone out of the pork chops.
  2. Place the pork chop under a sheet of parchment paper (at least 12x12 inches or 30x30 cm) and use a rolling pin or meat mallet to pound out the pork chops until very thin (they should be somewhere between a ¼- and a ½-inch thick, or slightly less than 1 cm).
  3. Put the flour, egg, and breadcrumbs into three large shallow dishes for dredging.
  4. Next, squeeze lemon juice evenly and liberally over the pork chops on both sides (each ½ is good for about 2 chops). Sprinkle evenly with salt.
  5. Preheat your frying pan over medium heat. You can either fry in batches using one pan, or have 2 frying pans going simultaneously to help make sure everything is hot by dinnertime. The pork chops will fry one at a time, because they are large.
  6. Dredge the pork chops in the flour, taking care to coat every nook and cranny. Shake off the excess, and dip into the egg. Finish by thoroughly coating the pork chop in the breadcrumbs, pressing the breadcrumbs in with your fingers.
  7. Add the oil and butter to the pan. If frying in batches, start with 3 tablespoons of butter and 4 tablespoons (¼ cup) of oil for the first 2 pork chops. You’ll add the remainder to fry the last 2 pork chops. If using two separate frying pans, split the butter and oil evenly between the pans, and you should be able to get away with not needing to replenish.
  8. The pan should not be so hot that the butter browns immediately. You’ll know it’s ready when a piece of eggy breadcrumb sizzles on contact.
  9. Fry the pork chops, frying on each side for about 2 ½ to 3 minutes. If your chops are more lean, err on the side of less time. If your chops have darker meat, they’ll need the full 3 minutes on each side.
